My wife makes an egg bake casserole pretty much every Sunday. She has a few different ones so we don't get bored. Usually eggs and some kind of vegetable medley. This week was spinach, tomatoes, and onion. I like them because I can just throw a slice in a container and heat it up when I get to the office.
