I love getting ideas for meals! Especially meals that would be good reheated for lunches at the office.

Tonight I am making hamburger muffins made with ground turkey and low fat cream of mushroom soup! (Found it on allrecipes.com)

    Grilling up some nice Alaskan Coho Salmon...I'll probably do a quinoa pilaf with some onion, mushroom, and peppers...and probably some roasted brussels sprouts but I'm still on the fence there.

    Not great for a workday reheat I suppose...I don't actually make much that is until the fall/winter months when I do more big casseroles, soups, and stews.

    My own version of Southwest salad, using baby kale and fire-roasted corn, black beans, cheddar cheese, and green onions - with a bbq/olive-oil mayo dressing

    OR Taco Bell - - - but i hope to have the strength to not end up there.....(fingers crossed)

    I love soup..I make a large pot of chicken or beef vegetable soup with tons and tons of veggies..squash,carrots,celery,even green beans and I add a bit of tofu for texture instead of rice. It fills me up without weighing me down especially if I am eating later in the evening towards bed time.

    Baked seasoned salmon, steamed brussel sprouts, and parsleyed new potatoes. I won't eat the potatoes, though my family will. Homemade brownies for dessert (again none for me- I don't like chocolate anyway!)
