The problem with Keto is no bread and no real fruit. One loses weight quickly but the craving for bread is intense....
Counting calories. This is no fun. Who likes to keep track of everything put into the mouth.
I have been very inconsistent in my weight loss because of this....

Maybe do something else that you can stick to? It's not like Keto and straight weighing everything is the ONLY way to lose. You just need to create a deficit and if bread makes you happy, then have some. If you dont want to track, maybe IF would create a deficit without having to measure everything? (Keep in mind that it works just because you are eating for fewer hours and thus typically eating less food. Some people still need to track to create a deficit but for some narrowing the eating window is enough).2

Your problem with Keto is no bread and fruit which makes Keto unsuitable for you. The good news is that you don't need to eat that way to lose weight since it's not what you eat but rather how much you eat that causes weight loss (or gain)
The bigger problem is that you seem unwilling to do the one thing that you need to do in order to lose weight. Which is make sure you're in a calorie deficit. Sure watching what you eat isn't fun, but do you know what's even less fun? Being overweight and unhealthy. I don't "like" logging all my food but I didn't "like" being obese more.10 -
There are all kinds of meal plans out there to control your calories without counting. Also, as suggested you could try doing some type of time restricted eating. You could even do a hybrid Keto and calorie counting system where you stay on Keto for 5 days and count calories for 2 or some other variation.

To each their own, but to me, eating any food I want as long as I count it and it fits my goal sounds like a whole lot more fun than avoiding a wide range of tasty food because it has carbs.8

I’m doing keto for 3 weeks now and I only had one day that I wanted toast really bad. I went to the store and checked out every loaf and got the one with the lowest carbs. I had one piece and it was perfect and it didn’t throw me out of ketosis. You can have days with higher carbs but as long as you stay under 50 carbs, you will not be kicked out of ketosis. I try to stay under 30 though, so the one slice of bread didn’t kill me. Good luck.3

Lot's if misunderstandings in your post.
First, you don't lose weight quickly on keto. You lose initial water weight not fat. But the research data shows that, after that initial water weight loss, the rate of loss for keto is no different than any other diet if calories and protein are controlled and constant.
Second, while you don't necessarily have to count calories, if you are not eating less of them than you are burning, you will not lose weight/ fat. So, if you think you are capable of intuitive eating, great! If not, you better know the score on the calorie count if you plan on losing weight/fat.
If you have cravings for things like bread and fruit, keto is probably an unsustainable choice for you. Quite honestly, I don't do keto but I never crave bread. It's nice sometimes but no cravings.
Lastly, we are all inconsistent with our weight loss. It is the nature of the game. Water weight, food waste, all kinds of things make it an inconsistent experience. What is important is not linear consistency but a trend over time. Trending apps are very helpful in this regard.11 -

One loses *water* weight quickly on keto, but rate of FAT loss depends only on calorie deficit. A 500 calorie daily deficit with a high carb-low fat way of eating has the same one pound/wk loss as a 500 calorie daily deficit on keto. Keto works for some people because fat is satisfying so it’s easier for them to sustain deficit eating. It’s not true for everyone. And it provides no magical benefits beyond a calorie deficit. If you eat a surplus on keto, you will gain.
Give yourself the best chance at consistency and success by setting an appropriate calorie goal (I.e. a reasonable rate of loss) and using your calories on the foods you find most satisfying and enjoyable.4 -
Keto still comes down to calories. It only works because, ultimately, it's restricting calories. If you find giving up bread and fruit forever to be less restrictive than tracking what you eat, but eating whatever you like (within your caloric limits natch) then Keto would suit you, I guess. I'd rather track and be free to eat what and how I like for the rest of my life.7

You might be pleasantly surprised to find out you enjoy planning, weighing and logging your food to ensure a calorie deficit when you start to see the scale go down. As they say, you have to chose your hard.4

There is a whole big area between keto and calorie counting. I don't count calories and I don't do keto and I lose weight just fine. When I want to cut winter weight, I typically cut back on carbohydrates, but not remotely close to keto levels. When I'm trying to cut some weight, most of my evening meals will be a protein and a veg and I skip the grain or starch with dinner and I cut back a bit on snacking.
There's lots of ways to do this. I could never do keto and be successful. I did count calories for awhile, which gave me some good insight and training to the point that I don't really need it in my day to day to either maintain or cut some weight when I want to.2 -
I've found the opposite. Since finding mfp, tracking "everything everything that goes into my mouth", has really changed my life. It takes minutes out of my day, to count accurately. Knowing my calorie target, has given me the chance to eat what I like, when I like, as long as I stick to my "budget". Knowing I WAS in a deficit, gave me patience to stay on track, the weeks the scales didn't go down. Plus confidence to know it's "not fat" gain, but Definitely water weight fluctuations due to my autoimmune disease.
Has enabled me finally lose and know maintain a much healthier weight.
Well worth the time it takes imo.5
