I have a bunch of cucumbers since my friend gave me so many. What are some good easy recipes that use cucumbers?
What about cottage cheese?
Thanks

my mom's cucumber salad that I still make:peel & slice very thin cucumbers, I use 2-3 large ones. Put in bowl & drench with salt to get moisture out. After about 15minutes rinse off salt & squeeze out extra water, put in bowl. To bowl add fresh crushed garlic to taste (we like a lot 6-7) add salt, pepper, add white vinegar & water ratio about 2 parts vinegar to 1 part water, add a regular size tub of sour cream. let sit for couple hours before eating. The longer you have it, the better it gets. enjoy

Was about to suggest cucumber salad which is one of my Summer favourites, but Eva's beat me to it, so I'm left with recommending you cold cucumber soups, preferably Russian.

I love this Japanese-inspired spicy cucumber salad, plus it's fresh and pretty healthy.

I also use cucumbers as sticks to eat dips such as hummus, fresh cheese dip, roasted red pepper dip...

This is one of my favourite cucumber salads, though I replace the fish sauce for a little instant dashi powder.

If you get tired of salad, the Chinese stir fry cucumber with ground pork or prawns and garlic.

Cucumber soup, gazpacho, pickles, greek salad.

I’d second the stir fried cucumbers above. I love them cooked that way!

Honestly, though, I’ve been known to eat cucumbers like apples, so I’d probably just do that if I had a glut! 😂

Agree with cucumber salad, I keep it simple and usually make it with cucumbers, tomatoes, red onions and a little zesty italian dressing. I also use them in tossed salads and will also sometimes infuse them in water for drinking.

I remember being at a fancy restaurant once where they served cucumber granita.

I would probably toss in some vodka which would help to deter large ice crystals from forming.
