Picked veggies: how to log?

Basically I would love to picked more regularly and am uncertain about how to count the calories for this. I generally count everything, including 30gr of leafy greens. Of course the veggies in the pickle don't have many calories. vinegar doesn't either. But there's a pile of sugar in it, lots and lots of spices, possibly oil (I like Asian and Indian cooking) - and of course a substantial part of the fluid might get kicked out eventually, some 3 months later or whenever the jar is empty. Any idea?

    This might not be right but I'd log everything in the jar.

    Oh, pickled, lol. I thought you meant like when I am out in the garden eating foods as I picked them. I often don't bother to log the strawberries, cuz I am weeding while I do it, and they are low calorie.

    Hmm.. might be worth looking at how much fluid is actually left in the jar once it's empty. But of course I did not write down what went into the current jar to start with. :D

    I make a fair amount of pickles and chutneys plus Kimchi.

    I’ve used the recipe builder and weighed the finished product before putting in the jars. Making the recipe servings match the gram weight. Then I weigh what I’m going to eat and log that as the serving size in grams.

    You’re right, during the cooking process liquid is driven off (obviously not with Kimchi) but that liquid is going to be just water so that has no impact on the calorie count of the finished pickle.

    Too late for this jar, obviously, but it’s helped me enjoy a spoonful of deliciousness with some meals without worrying about the accuracy.

    Hmm.. to be honest, if I make pickle then there's a huge amount of vinegar in the jar with sugar, potentially oil, spices and herbs - certainly more than the veggies. Thus not everything is absorbed by the veggies but remains in the jar and eventually gets discarded.

    Look at the calorie count on the jars of store bought stuff and go from there.

    That was going to be my suggestion as well (assuming similar sugar absorption to those is about as good an estimate as I can think of).

    If you are not averse to artificial sweetener, then splenda (and then not having the extra sugar calories in the jar to begin with) might be another option.

    Yes, I'm using store bought product calories at the moment. At least for acar, even though I use a lot more spices, garlic and the likes. I can't get anything else, thus can't even compare how taste differs.
