I have been using My Fitness Pal for a few years now, but I've struggled with consistency. I am bound and determined this time to log everything and give it my all......but I'm having a little trouble finding the correct exercises to log for better accuracy. I am using an aerobic stepper to do knee lifts, lunges, and side lunges. I've searched for anything similar to this to log, but can't find anything that fits. Please help me find the right spots if you can! Thanks.

I use a generic strength/cardio exercise I created for myself and put 200 calories against it.

Whichever method you decide on, just remember it’s a guesstimate. You will still need to watch trends over time to see if you are gaining/losing and adjust the calories you think you’re burning as you go. OR adjust what percentage of them you eat back.
