I’m gaining weight every day help

So for the past few months I have really been struggling with my weight. I have for years been mostly the same weight just below or above but recently my weight keeps going up. I don’t feel like I am eating more than usual but every time I get on the scales I would have gained weight. There are some days when I’m that busy as work I hardly eat and then I will gain like 3lbs. I have tried loads of diets And exercise. I’ve calorie counted, slimming world, weight watchers and others and at the end of the week I will be sure I should have lost but I would of stayed the same or gained. I’ve gained 12lbs now and it keeps going up and nothing it getting rid of it. What can I do

Have you considered getting a food scale and actually using this account the way it was designed? To count calories? So you don't "feel" like you've eaten more than usual, but instead have a record of how many calories you've consumed, so that if your weight isn't doing the thing you wanted it to do, you could adjust by a few hundred calories to correct your path?
Oh, and patience. Have you tried continuing a single method for longer than a week? Especially if you've made more than one change at a time? Weight loss is not linear, and exercise will affect water weight, perhaps masking weight loss!18 -
You don't gain fat by eating as always or even less than normal. You only gain fat when you're in a calorie surplus. Of course there are day to day weight variations that depend on how much water your body stores (can happen with a new workout, hormonal fluctuations, drinking too little, sitting too much or any other reason) and of course waste in your system, the so-called poop-weight (well, I want it to be called poop weight. Rooting for it ).
With that out of the way the solution is simple: ignore small fluctuations, focus on the big picture, and track calories properly by using a food scale and correct database entries.8 -

Another possibility is that you're eating as much as before, but that you have become less active. (you mention exercise, but you might be less active in daily life)
But I agree with the advice given above, to track your food intake and use a food scale and track the general trend of your weight (ignoring short term fluctuations).8 -
You should also consider the possibility that you haven't gained any or much fat weight. It could be water retention. Scale spikes that happen in very short time frames can't be fat under normal conditions. If you gained 3 pounds in a single day that is mostly water unless you are very constipated.
Are you noticing any swelling around your ankles? If so, you should see your doctor.
Are you under a lot of stress? The 3 and "others" weight loss methods you have done in the last "few" months sounds like you are very stressed. It could be that you gained a little fat weight and you have gone overboard trying to get rid of it. The exercise, physical, and mental stress could have added the rest.
Have you been ill? Sore? Any type of skin issues?
It could be that you have gained weight but it is kind of unusual for a person who is trying to lose to be gaining. It is more common that you lose more slowly than desired or stay around maintenance.

Over the summer you posted a couple of threads about massive bloating, belching stomach pain etc. did you see a doctor about those issues? Did they go away, or are they still contributing to your problem?8

I had those symptoms when I was pregnant but didn’t know I was pregnant at the time. At my doctor’s appointment I was told. Call your doctor.7

We need more information. What are you eating? How many calories? How much exercise are you doing? Are you male or female? How old are you? How tall are you? What is your weight?
With COVID a lot of people are eating more than they normally do and are moving less. The result.... the COVID 10-15-30pound weight gain.
Skipping lunch might be causing you to absentmindedly snack or eat a much larger dinner. Also if work is that busy and I’m guessing stressful, then you could have a cortisol response happening.
