I really like this one:
Spiced Chickpeas with Potatoes and Tomatoes
Ingredients
1 medium uncooked potato(es), peeled and cut into 1⁄2-inch cubes
1/4 cup(s) dry lentils, red variety, picked over, rinsed, and drained
4 tsp canola oil
1 medium uncooked onion(s), chopped
1 jalapeno, seeded and chopped
1/4 tsp garam masala
1 tsp Cumin seeds
1 pound(s) plum tomato(es), chopped
15 1/2 oz canned chickpeas, rinsed and drained (I prefer using the dried ones)
1 Tbsp ginger root, peeled and minced
2 clove(s) (medium) garlic clove(s), minced
2 Tbsp cilantro, fresh, chopped
Instructions
Bring a medium saucepan of lightly salted water to a boil. Add the potato and cook until fork-tender, about 7 minutes; remove with a slotted spoon and set aside, reserving the cooking liquid.
Add the lentils to the same saucepan and return to a boil. Cook until the lentils are tender, 8 – 10 minutes; drain and set aside.
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, jalapeño, garam masala, and cumin. Cook, stirring frequently, until the onion begins to soften, 3 – 4 minutes. Stir in the potato, tomatoes, chickpeas, ginger, and garlic; cook, stirring occasionally, until the tomatoes soften, 4 – 5 minutes. Stir in the lentils and cook until heated through. Remove from the heat and stir in the cilantro. Yields 1 cup per serving.0 -
I am obsessed with roasted chickpeas. Preheat oven to 400 then open and drain a can of chickpeas. Toss in a bowl with spices and olive oil and roast for 40 minutes.0

Hummus is always nice and you can change it up with various additions like roasted garlic, roasted red peppers or this yummy Roasted Poblano Hummus.

yum indeed, that looks immense
P.S. dried chickpeas literally just need to be soaked overnight, using dried goods is a little off putting at first but i am getting into it provided i plan the day ahead i am good to go.
Cheaper too... i think.
Is that really all that has to be done? No cooking required to get them to "can level"? I think I might have to make the switch. Way cheaper and probably way lower on sodium levels.0 -

I went on allrecipes.com before and I think I found a recipe for a mock tuna salad. Haven't tried yet, but it looked tasty.0

Toasted Chickpeas
This is a great recipe that can be changed to fit your taste buds. Simply substitute the dry ingredients for your favorite flavors.
Ingredients
1 can chick peas
1 tsp chili powder
1 tsp garlic powder
1 tsp sea salt
1 lime, squeezed
Directions
Step 1
Preheat the oven to 350.
Step 2
Mix all the ingredients together in a small mixing bowl until the peas are coated with seasoning.
Step 3
Bake for 15 minutes, remove from oven. Move the peas around so they will toast on all sides. Return to oven for an additional 15 minutes.0 -

3 cups drained chickpeas
1/2 cup mayo (I make my own vegan version)
1 tsp curry powder
1 Tblsp prepared yellow mustard
1 Tblsp lemon juice
3 Tblsp fresh chives

I love chickpeas and will eat them almost any way but my favorites are either curry or in the winter i make a chickpea and spinach soup that is fairly simple its just...
2 cups veggie broth
1 can of chickpeas
1 cup of veggies (i usually do potatoes)
1/2 cup of cream (or for vegan i mix soy milk with corn starch to thicken it)
2 teaspoons cayenne pepper
salt and pepper
and as much chopped spinach as you would like
You just simmer the chickpeas and veggies in the broth until the veggies are tender then mix in the cream, seasonings and spinach and let it simmer on low heat about 10 minutes or until the spinach is wilted.0 -
