How can I up my caloric intake without adding fat or sugar to my diet?

I am having gallbladder problems- and will be having my gallbladder removed January 3rd. I have lost around 30 lb in the past two and a half weeks and realized I'm pretty much on a starvation diet. I can't have much sugar or fat as it bothers my gallbladder- also not any white flower. Does anyone have any foods that are not going to cause me pain yet will provide sustenance? I can't really eat much dairy and I've pretty much been surviving off of egg whites pb2 protein shakes ripple milk chicken tenderloin and brown rice.

With the restrictions you mention, a few ideas:
- lean proteins: any animal really, as long as the cut is fairly lean: turkey, pork,... as well as shrimp, (less fatty) fish,...
- on the carbohydrate side of things: have you tried sweet potato, potato, quinoa, beans, lentils,...?1
