What's the optimal time of day to start your fast?

Just after you finish eating?
There is no optimal for everybody and every different kind of fasting.1 -

That is what literally went through my mind 😆1 -
I fast from sunrise to sunset. It suits me as I can eat just before I go to bed. I try to only have 1000 calories on fast days so eat a breakfast just before sunrise and have an egg sandwich just after sunset. I fast on Mondays and Thursdays as is traditional in Islam but I think you have to work out whats best for you, there are lots of options.3

IF is a tool to help you stay in your calorie deficit....which is how you lose weight. Eat/fast when you want.4 -
Many people find it beneficial to do a 16 hour fast by just skipping breakfast and not snacking in the evening. If you tend to b e an evening anacker while you watch TV or whatnot, it will most likely help you cut at least some calories.2

There is no biological weight-loss advantage to certain food-window times.
Additionally there is no biological weight-loss advantage to longer, shorter, later, earlier or even implementing any fasting schedule at all.
Fasting helps some people to control their calorie intake. That's it. No magical, "insulin-tricking-weight-loss-hack," involved.
If you like it and it works for your personal situation, pick any schedule that you like. There is no advantage to 11AM-7PM, 4AM-12PM, 6PM-5PM or any other schedule, and it doesn't matter if you use 12/12, 14/10, 16/8, 20/4, 23/1, all day fasting (or severe restriction) like 5:2, 6:1, or whatever other numbers.
