I've already hit my fat goal for the day but still need to eat at least 300 more calories to hit my minimum calorie goal. I could definitely use more protein and carbs wont hurt. Any ideas?

First of all, there's nothing wrong with going over your fat goal, unless you have a medical condition that requires you to limit it.
First thing that comes to mind if you want some protein is non-fat greek yogurt with some fruit.
For something more carb-y...pretzels, bread/toast with jam, crackers, cereal with milk.3 -
Does this help?

For clarity: That's a random source. I'm not necessarily endorsing the whole article let alone that site, but I hate it when people take info from sites, don't link/credit them. That's cheesy. (Which is mostly fat, with some protein, so not what you're looking for right now. 😉)2 -
It is more important to eat the proper amount of fuel for your body than to hit whatever macros you have set. Especially if your macros are the default MFP ones. Just choose something that isn't primarily fat I'd say that sounds good and eat it.0
