Low Fat Rx

Recently passed a gallstone and was discharged from the hospital with a “low fat” diet recommendation. Textbook definition of low fat is apparently <30% of calories derived from fat, but I’m still in a trial/error phase of discovering how many grams of fat I can handle per day.

Does anyone have low fat recipes they love and can share?

    What is your calorie requirement?

    I didn’t realize >30% was considered low-fat, the more you know 🌈 lol. I typically eat anywhere from 20-30% fat daily without noticing and stick to my calorie budget. I don’t change any recipes to meet a low fat requirement per say because the fat in the food typically satiates me and gives the food flavor.

    Oooof, I feel you! I had terrible gallbladder issues after having my second baby - excruciating pain.

    My go to meal during that time was vegetarian/ground turkey sweet potato chili. After a horrible trail and error period, I ate this for three weeks straight with no issues or pains until I had my gallbladder removed. There was fear the issues were going to cause pancreatitis so it had to go.

    I modified the recipe below to match my tastes (added corn, more beans & spices, removed olive oil and cilantro) and would recommend going light on garnishes. I still make it about once a month because I liked it so much - though now I can add ground beef!

    Also, I just threw everything in crock pot and cooked on low for 6 hours.

    Trimming fat/skin from meat/poultry fish helps a lot. Grilling over charcoal gives lots of flavor and lets the fat drip off, too.

    This is one of my favorite fall soups........

    Unstuffed Pepper Soup
    6 servings

    RECIPE BY Cooking Light

    Ingredients
    1pound ground round (or ground sirloin)
    2 cups chopped green / red bell pepper
    1 cup chopped onion
    1/4 teaspoon black pepper
    1 (14-ounce) can less-sodium beef broth
    1 (14.5-ounce) can diced tomatoes, undrained
    1 (10 3/4-ounce) can tomato soup, undiluted (I prefer Progresso Tomato Basil)
    1 1/2 cups hot cooked white rice
    Heat a small Dutch oven over medium-high heat. Add beef; cook 3 minutes or until browned, stirring to crumble. Add chopped bell pepper and onion; cook 8 minutes or until vegetables are tender. Stir in black pepper, less-sodium beef broth, diced tomatoes, and tomato soup; bring to a boil. Reduce heat, and simmer 45 minutes.
    Spoon 1/4 cup hot cooked white rice into each of 6 bowls; top with 1 cup soup.
