Chia Seed Pudding recipes

I've been reading about the benefits of chia seeds and interested in using them more often in my plan. I made one last night for my breakfast this morning and I wasn't really thrilled. It was a chocolate pudding, made using cocoa powder. There was maple syrup as a sweetener but it didn't really cover the bitterness of the cocoa.

I'm interested in your chia seed recipes, favorites, tips, anything!

    I don't much like chia seeds myself after giving them a fair try, and the nutrition they have is available in other foods, so I eat the other foods instead. It's the totality of one's nutrition that matters, not so much one "superfood".

    But: I'd ask what type of cocoa powder you used. There is a type called "dutch processed" cocoa powder that's less bitter tasting that might work better, if you used the regular less-processed type. Dutch processed is somewhat lower in antioxidants/phytonutrients, so there's a tradeoff of that vs. flavor.

    @KaileyCo I actually love chia seed pudding. Chia seeds contain a lot of omega-3 fatty acids, fiber, and protein. It's important to make it ahead of time so the seeds soak up the liquid.

    The recipe, I like, but have modified a bit, is by Giada De Laurentiis on the Food Network. It doesn't include cocoa powder.

    Although, it sounds weird, I like adding a heaping teaspoon of Hersey's 100% Cocoa Special Dark powder to my coffee. That's the one that AnnPT77 is referring to "Dutch processed". It contains much more potassium than the other version. But, if you add it to your coffee, when you freshen up your cup, it's best to stir it again. I'm not sure if you're a coffee drinker. But, I kind of like it added to mine.

    I make Giada's recipe pretty much like it was written. The only thing I've changed is I use 1/2 maple syrup and 1/2 Wholesome brand allulose. Since I eat it every morning, I've quadrupled the recipe. Also, I don't add the topping she suggests. I just add finely diced walnuts (28 grams), blueberries (70 grams), a little Ceylon cinnamon and a dash of half & half.

    @KaileyCo I just wanted to mention that Giada's recipe is perfect as is. But, I don't do the topping thing. She does it because she's a professional chef and wrote the recipe to serve to guests.

    I just make the pudding and refrigerate and then add my own toppings daily. She's an amazing chef and it's a really good recipe.

    I've made it so many times that I don't have to even look at the recipe. One thing that I find helpful is to add everything (except the chia seeds) to a bowl and use my immersion blender to blend everything. Then, I add the chia seeds and then use my whisk. The recipe calls to let it sit on the counter for 30 minutes. After that time, I whisk again and add to containers and refrigerate.

    Thank you both! I did use regular cocoa powder the first time, but I am a baker so I have both. I will give it a try with the Dutch cocoa powder. The Giada recipe also looks good and I look forward to trying that one as well.

    @KaileyCo That's great that you're a baker. I tried making my own bread years ago. But, I just couldn't get it right. So, I gave up!

    Hi,

    Here is are 3 easy chia pudding recipes:

    1. Berry Chia pudding
    Berry of choice (I like doing a mix) half puréed , half whole
    Water
    Vanilla extract, or vanilla shavings
    Touch of cinnamon
    Black or white chia seeds

    I add all together - and let sit at least 4 hours in fridge.

    I’ve also layered this with coconut yogurt and enjoyed.


    2. Pumpkin puree Chia pudding

    Pumpkin puree
    Chia seeds
    Pumpkin pie seasoning
    Mix all together and refrigerate.

    Also great as pumpkin pie filling.

    3. Dragon fruit chia pudding:
    Chia seeds + dragon fruit puree
    mix together, let this absorb liquid-
    Done.
