Breakfast - bored of the same stuff

I am looking for a meatless breakfast option other than oatmeal - Help!

Hah, this question always pops up in one form or another. We are all obsessed with breakfast!
I've been going for small breakfasts, sometimes delaying eating them until late morning. I prize anything that is minimally processed. Lately, I've been having a banana and 1 oz of roasted unsalted mixed tree nuts. It's about 300kcals and I find it very satisfying.
I'm in no danger of not getting enough protein as I eat a turkey and cheese sandwich for lunch and almost always have meat again for dinner.

For breakfast I put a banana and blueberries on my oatmeal and a scoop of almond butter. And when I eat eggs I like avocado mashed with everything seasoning and an egg on top of it.

Protein Donut Holes
1 scoop protein powder
2/3 cup Greek yogurt
1/2 cup self rising flour
Mix protein powder and self rising flour.
Fold in Greek yogurt until dough forms.
Form into balls, air fry at 325 for 9-10 minutes
Top with a drizzle made from another scoop of protein and top with sprinkles.

Like you, I'm vegetarian, in my case, ovo-lacto. You don't say what type of vegetarian you are, which would be helpful information.
I love my oatmeal with mixed berries, plain nonfat Greek yogurt, cinnamon, hemp hearts, milled flax seed, peanut butter powder, and blackstrap molasses.
An alternate breakfast I like on days when I have an early workout: Ezekiel pita bread with peanut butter, cup of plain nonfat kefir.
Keep in mind that there's no rule that breakfast has to be "breakfast food". You can eat any food that sounds good to you, that contributes to your daily nutrition, keeps you full and happy, and fits in your calorie goal.

I have a few tips, and some commendations will be simple and quick, others will involve some cooking/prep. But overall inexpensive and easy.
Spam Musubi breakfast bowl (Seaweed/furikake optional but recommended )
1. 2 Cups jasmine rice(for best taste, wash and rinsed 3 times.)
2. 1/2 can Spam Lite, finely diced.
3. 2-3, eggs, Scrambled finely (egg whites only to lower cholesterol/reduce calories)
4. To taste, Seaweed/Furikake , chopped finely.
5. 1 tbs Soy sauce/1 tsp honey (Tamari sauce for lower sodium content, honey optional)
Instructions: Rinse and cook rice as package directs,Cook diced spam in pan until crispy. Add soy sauce and honey to spam and cook soy sauce down until sticks to the spam. Cook eggs and scramble. Add ingredients together in bowl, and mix. Left overs freeze well.

Also, don't limit yourself to traditional breakfast foods. Anything can be eaten for breakfast. I recommend looking into other cultures breakfast dishes to get some ideas.
Some other easy breakfast ideas
1. Leftovers from dinner---my favorite
2. Avacado toast with chia and flax seeds, with egg whites and tomatoes
3. Peanut butter on whole grain toast with a side of fruit
4. Low sugar granola cereal, served with low fat milk(or milk substitute) topped with chia seeds, berries, nuts.
5. Nonfat Greek yogurt topped with granola, honey, 1 Tbs of chocolate chips, chia seeds
6. Egg bites

ALSO, I like this recipe for Cottage Cheese Pancakes (Similar to Syrniki, farmers cheese pancakes) from momsdish.com.
- 1 1/2 cups cottage cheese (you can blend it smooth or leave as is)
- 4 eggs
- 1 tsp vanilla extract
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 cup flour
- 1/4 cup canola oil for frying (you can replace with avacado oil, or another heart healthy neutral tasting oil)
Mix and cook until desired. Top with jam, fruit, honey. Recipe makes 16 pancakes. Pancakes freeze well. Serving size is 2 pancakes. About 200-+ calories

OMG would these be Ukrainian farmers cheese pancakes? I’ve been looking for a name and recipe for ages, after having them for breakfast in Lviv.
The texture, taste, everything about them rang every one of my bells.
Recipes I’ve tried have been an epic fail. 😭

I usually have soup. Ages ago, I realised that the idea that breakfast needs to be 'breakfast food' was really limiting, and not logical. So I'll often have leftovers etc, but all winter I've been having soup. It's easy, fast, warming, filling, and there are so many types. I make a pot and it lasts me the week.
