Take out the corn and add sun dried tomatoes - you'll like the results.

THIS...and add feta :-) I eat one similar to this all the time .... You can also make this salad with Kamut and or forbidden rice..... Delicious! With feta you don't need oil or any dressing either :-) :-)

Oh my word- I LOVE FETA-Im gnna have to try this!!

I am new to the site and I've been making a salad like this for a while - shaycarl first got me hooked, only I don't add the avocado, since it doesn't keep as well.

Typically the lemon helps the avocado not to brown. I made a big amount on Tuesday evening on Quinoa night and added avocado. I ate this everyday for lunch until today (Friday) everything stayed fresh and the Avocado didnt even turn brown!

I plugged mine in with chicken it was 412 cals for 1 cup..so without meat (like in pic) im sure its less. I think its 222 cals for 1 cup plain ...
