    I have leftover spinach artichoke dip from the game last night (:grumble: ) so I'm making chicken breasts stuffed with the dip, breaded and baked. Pairing it with some yellow sweet peppers from the garden baked in italian dressing topped with parmesan cheese on top of some wheat noodles. NOM!

    Crockpot BBQ chicken with corn and oven roasted potatoes, yummy!

    Pat's Fiesta Chicken-Serves 4

    2 boneless skinless chicken breasts, diced
    1 can chopped tomatoes
    1can rotel tomatoes
    1 can drained black beans
    1 onion diced
    2 tablespoons chili powder
    8 tablespoons salsa - heat of your liking

    Put it all together in an oven proof dish, bake at 350 for about an hour.
    Per serving: 282 cal, 32 carbs, 33g protein, 2g fat and 11gr fiber.

    Serve as is or over brown rice. Top with some shredded cheese if you like. Add some beef broth to make it into soup.

    Baked Salmon (cooked over peaches, mint and seasoned with ginger) oven roasted a bunch of veggies--broccoli, green beans, onions, mushrooms, and egg plant tossed with a bit of Lawry's Hawaiian sauce.
