    Nothing. Sweet potatoes are usually tasty enough on their own imo.

    If not, I've used maple syrup. It is really good.

    Don't really know what all vegans can eat or not eat but I put butter, splenda brown sugar blend and sometimes marshmallows and heat it in the microwave after you put on the marshmallows to melt them, it is awesome that way.....

    I like cutting them into wedges, lightly coat with olive oil or Pam spray, then sprinkle with salt, pepper and paprika.

    Oh if you eat healthy all day long a little butter, brown sugar and cinnamon on your sweet potato wont do anything to you but make you enjoy it! Mmm Yumm.

    My favourite thing to stuff on baked sweet potato:

    Thaw some frozen spinach
    Cook it in a saucepan with a teeny bit of oil and a LOT of garlic
    A spoonful of Philadelphia Lightest
    A couple of cubes of low fat feta crumbled
    More garlic plz

    Grate a little parmigiano on top as well if you fancy .

    Sometimes I put some prawns in there too or some chicken chunks :)

    It looks pretty gross but it's super tasty

    EDIT: I forgot, poach an egg and pop that on top too. Keep the yolk just a little runny

    I can go on and on since I am former chef.. But few ideas:
    Cut in wages, coconut(olive oil), cumin, cinnamon, sea salt, black pepper stick in the oven on 180oC for good 30 min; also you can add parsnips(roasting time the same) and pumpkin(small cubes or wages)
    Serve with hummus
    Cut in small, roast with olive oil and salt(as above) cool down mix with rocket leaves, olives and sprinkle some pecan(walnuts) and fresh herbs
    Cup of quinoa(gluten free) 1 sweet potato peeled and cubed, up on the stove with some salt(may be some spices - cinnamon, cumin) let it simmer for 30 min. Turns out as mash..
    Also simply peel, cut add some other tubers if available(parsnips; pumpkin; swede;) on the stove boil and mash adding coconut milk - divine - can add as a side to beans; nut roast etc..
    And of course good old Sweet potato soup - as above just add some more coconut milk and blitz; sprinkle some roasted pumpkin seeds and I'd personally add some garlic and ginger at the beginning; top up with some coriander..
    Jeezz - I can realy go on and on...

    Tonight I am having sweet potato with slow cooked BBQ jackfruit. Just chop up tinned jackfruit and an onion and slow cook in your favourite BBQ sauce. If you don't have time to slow cook just dry fry.
