I like pumpkin ravioli or agnolotti. There are oodles of recipes online. It's lovely in either a fresh tomato sauce, or a sage cream sauce.0

If it doesn't have to be totally healthy, I found a recipe for pumpkin caramel cookies (the caramel is really just the frosting if I remember correctly, so you could leave that off and save a few calories per cookie).

Pumpkin pie protein shake!
Half a banana (or a whole one if you don't mind the carbs. Half an avocado for a really creamy one)
1/2 cup pumpkin pure
a scoop of vanilla protein powder
a tsp of pumpkin pie spice
ice and almond milk to make it the texture you want.

There is an old Weight Watchers recipe that calls for 1 box of spice cake or carrot cake mix, and 1 can of pumpkin. That's it. No oil, eggs, water, etc. but you CAN add mini or regular chocolate chips. We put them in muffin pans or drop them on a cookie sheet and they cook up like cake cookies. Very good and super easy.0

Going to try a recipe for 2 ingredient pumpkin spice cake:

Ingredients:
1 (18.25 ounce) package spice cake mix
1 (15 ounce) can pumpkin
Directions:
1. Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
2. In a large bowl, mix together the spice cake mix and canned pumpkin until well blended. Spread evenly into the prepared pan.
3. Bake for 25 to 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Cool, frost if desired, and serve, or store in the refrigerator. This tastes even better the next day0 -

Vegan(can be made non-vegan) Pumpkin pie latte.
1/2 cup strong coffee
2-4 tbsp pure pumpkin puree
1 cup almond milk (you can use normal milk, if you like. Normal milk gives it a more rich taste. also, i use silk 30-calorie unsweetened original.)
1/4 tsp pumpkin pie spice
stevia to taste (you can also use sugar.)
combine the pumpkin, milk, spice, and stevia in a microwave-safe container, then microwave for 2-3 minutes(depending on your microwave)
when it's hot, either put in a blender, and blend until smooth, or get a whisk and whisk it up.
combine milk/pumpkin mixture, and stir.
enjoy.
for all of that(which normally comes out to be about 1 and 3/4 of a cup), it's only 42-52 calories, depending on how much pumpkin you use, and if you use almond milk and stevia.
it's especially good on cold nights.0 -

A lot of these have too much sugar for my program. Someone said to grill it; that's good. If you're using canned pumpkin, you can just heat it up and eat it like mashed potatoes as a side with a little butter, salt, and pepper.0

Go to allrecipes.com or even spoonful.com. Both have some really great recipes for both kids and families. One of the popular recipes that I hear about lately is the pumpkin ;chocolate chip cookies. Haven't tried them yet but I will soon.
Today I am chopping up my halloween pumpkins to make pumpkin mush. I will freeze what I don't use and then I have fresh pumpkin all year long. Good luck.0 -

I made my first pumpkin pie protein shake today...it was DELICIOUS! I made my own pumpkin pie puree last week and today used that for my shake.
1 C unsweetened almond milk
1/2 C homemade pumpkin pie puree
a dash of organic vanilla extract
a dash of ground cinnamon
1 scoop Sun Warrior organic vanilla protein powder
1/2 T of honey

Pumpkin butter you can put this on toast in the morning or add to veggies for a snack. It is sweet for the sweet tooth but I cut the sugar in half and added in 1/2 c brown sugar. Left out the cloves personal preference.
