    This is my #1 all-time most requested dish, and it is crazy simple and SOOO freaking good!

    Crockpot Carnitas

    4-5lb pork butt/shoulder (bone-in or boneless, it doesn't matter) - I trim the big chunks of fat out, but not all of the fat otherwise it gets dry
    1:1 ratio of cumin to kosher salt - rub it all over the outside of the meat. You want a nice even coating. I usually use about 2Tbsp of each
    juice of 2 limes and 2 oranges
    6-10 peeled garlic cloves, whole
    about a cup of beef broth (or chicken or vegetable, whatever you have, but beef tastes the best)
    You can also slice a couple of onions in with this, but you don't have to.

    Rub meat all over with cumin-salt mixture and plop in the crockpot
    throw in the garlic (and onion if using)
    Squeeze the juice from the citrus over the meat
    Add the broth to the pot.
    Cover and cook on low 8+ hours until the meat falls apart easily
    Drain most of the liquid, reserving a cup or so, and then shred the meat with two forks. Add back some liquid if it's too dry.
    Stuff this in your facehole and make yummy noises.

    I usually serve with small corn tortillas, shredded cabbage, salsa, lime wedges, and cilantro.

    Leftovers can also be mixed up with some BBQ sauce for pulled pork sliders. Or you can make tacos again by heating up the meat in a cast iron skillet with a little bit of oil and it gets crispy and delicious! This is definitely one recipe that is great the first day and amaze-balls as leftovers.

    Almost exactly like ours - it is so slammin delish! Now I want to go get some pork - If you like it crispier I throw it in the cast iron under the broiler right before serving - Really tasty with tomatillo/avocado salsa -

    More than 5 ingredients, but it is REALLY worth it. Just throw all the following in the crock pot and cook for 8 hours on low (I do the last hour on high because it makes the peas more "creamy". A bit spicy so not for picky kids (although mine love it)

    Ham and Split Pea Soup
    Ingredients
    • 1 pound dried split peas
    • 2 ham hock
    • 1 chopped yellow onion
    • 1 cup chopped celery
    • 1 cup chopped carrots
    • 2 teaspoons minced garlic
    • 1 pound ham, chopped
    • ½ lb Anduille sausage – cooked kind
    • Salt and pepper
    • 1/2 teaspoon crushed red pepper flakes
    • 8 cups chicken broth
    • 1 bay leaf
    • 2 teaspoons thyme
    • 2 tbs herbes de provence – if you have it, otherwise some oregano
    • Gruyere – serve on top of each bowl (optional)

    Another favorite: my son and his friends could eat this all day!

    Here is a great quick and easy Chile Verde.

    3 – 5 pounds of pork shoulder or butt – whatever has less fat
    an onion (chopped),
    garlic,
    a little cumin,
    a large can of Green Chile Enchilada Sauce,
    large can of roasted and chopped green chilis,
    a large jar of green chile salsa (contaiins tomotillos)
    and if you want some “heat” add some cayenne or chipotle chili powder. .

    Cook on low for 10 hours an

    Serve with warmed tortillas, sour cream and cheese and fresh cilantro (optional)....my husband likes it over rice

    Place 4-5 boneless chicken breasts in bottom of crockpot. Pour 1/8 cup of balsamic dressing over it.
    Layer sliced red potatoes over chicken. Layer green beans or veg of choice on top. Pour another 1/8 of a cup of balsamic dressing over vegetables. You may even add 1/4 cup of grated cheese if desired.

    Cook on low 4-6 hours.

    I've made too many to count.

    last week I made a KILLER vegetable beef soup.

    4 potatoes cubed
    1lb bag baby carrots
    2lbs stew meat
    1 onion
    i bag frozen green beans
    1 can diced tomatoes
    1 can beef broth + 1 can water
    Worcestershire, s/p, garlic to taste

    Big mac meatloaf

    3 big macs (or whoppers)
    1 pound ground lean organic beef
    pepper
    salt
    onions

    spread this layer of beef in pot
    cut macs in half, place in cut side UP
    add onions, salt, pepper

    cover with remaining beef.
    cook on low for 6 hours.

    I've been known to just put a meat of some sort. I've done beef roast, pork roast and today I put a whole turkey breast in the crockpot. Depening on our moods, I season accordingly. Sometimes onion soup, sometimes creole, sometimes just some NuSalt and pepper, sometimes garlic. I just cook it on low all day long and we've got some delicious dinner. We are pretty simple though. We usually just have a salad or some rice with it. Anytime you do meat in the crockpot though it's bound to be moist and tender!

    Three packet roast:

    Put a roast in the crockpot, cover it with the three packets of dry seasoning {one of Italian dressing, one of Ranch dressing, and one of brown gravy}, and add 1/2 cup water. add cut up (halved or qtr) potatoes, and carrots, cook all day on low.

    Haven't tried it yet (in the crock pot now), but I'm serving pulled pork tonight. I used pork loin (it was on sale, I was going to buy just pork butt/shoulder) and threw that in with beer (2 bottles since it was 5.8lbs of pork), cayanne, cumin, chili powder, and a tablespoon of brown sugar. I'm cooking that on low all day, and tonight I'll drain most of the liquid and add a bottle of BBQ sauce.

    How was it? I'm thinking of trying this recipe.

    i do similar, but in stages. First i do the pork shoulder in the crockpot with some broth and spices, we eat the pork as meat with some mashed potatoes and veggies or salad. then the next night, i dump some Sweet Baby Ray's on the pork and make pulled pork sandwiches for dinner.

    I did a whole turkey breast in there two days ago. We ate the turkey for dinner, with some potatoes and a salad, then I made turkey pot pie the next night and turkey enchilada casserole tonight. Any meat in the crockpot is awsome.

    Beef roast, carrots, potatoes, onion, celery and some beef broth makes a great beef stew.

    I do this ~once a week:

    -Around 1 pound of boneless/skinless chicken breasts (raw or frozen)
    -1 jar of salsa (any kind, my favorite is Newman's Own Black Bean and Corn)

    Just put the chicken in the crock pot before work and pour the jar of salsa over it. Cook it on low until you get home! Shred with two forks and then you can do tons of stuff with it.

    1) Over brown rice with various toppings (black beans, tomatoes, sour cream, jalopenos, etc.)
    2) In tortillas like a fajita or taco
    3) plain with just a fork
    4) add some sour cream and hot sauce and dip tortilla chips in it

    It is also great left over!

    Rotisserie Chicken: one whole chicken, rinsed and patted dry. in a small bowl make a mixture of cayenne pepper powder, garlic salt (or any fav spices) add just enough water to make a paste. Take paste and rub all over chicken. Place chicken breast side up (do not add water) cook on low all day...there ya go! I have two crockpots because my daughter has a milk allergy, but when I don't need the other for an extra recipe for her, I use it to boil my potatoes all day.

    I've made spaghetti sauce with meatballs in the crockpot. Form your meatballs, place in the crock pot and pour your sauce of choice on top. Can be cooked low for 6-8 hours or on high for about 4. You can also do this with just ground beef, breaking the meat up a little (but not too much) and have a good spaghetti sauce with meat. I've also made a bunch of recipes from http://crockpot365.blogspot.com/ Some have more the 5 ingredients, but most are fairly easy and she has notes on whether or not her kids like a particular recipe. Her crockpot falafel recipe is awesome and turns out really great.

    Really calorie laden:

    Crawfish Soup

    1-2 packages of Frozen Crawfish tails
    1 block cream cheese (cut in chunks)
    Cream of Potato soup (1 can)
    1/2 a pint of half and half
    1 can of yellow corn (drained)

    add all ingredients to crockpot and cook about 4 hours on low until cream cheese is melted.

    One note on all my recipes: Crockpot Liners are the Bomb! I buy two boxes or more a month! so much easier to clean up

    One of the recipes my family loves:

    Chicken Breast (or thighs) (I use a club pack)
    Salsa (2 large jars)
    Tumeric (2 TBSP)
    Light Cream cheese (1 Block)


    Cook up everything but the Cream cheese all day... then while you shred the chicken let the cream cheese melt into it and stir everything together and serve up over rice or on buns (or whatever the paleo peeps are eating instead these days)

    In a saucepan 2 cans reduced sodium chicken broth, 2 jars smuckers sugar free Apricot Preserves, tad bit of salt, about 3 tsp black pepper. Mix it up well put in the crock pot with the chicken is yummy.

    3 lb chicken breast/tenders **
    2 cans crm chkn soup
    1 can chedder soup
    2 cans chkn broth
    1/2 lb ham cubed
    6-8 slices swiss cheese
    1/2 lb velveeta (optional)

    put all together 6-8 hrs on high.

    **chkn can still be frozen


    serve over rice

    I love making soup in my crock as well as chili. I also love to make ribs- 2 ingredients ribs and BBQ sauce. Cook on low for 6-8 hours low. Delish!

    I also make lemon pepper chicken

    chicken breast or whatever is on hand
    lemon pepper seasoning (about 3 Tbsp)
    3-4 potatoes cut into wedges
    1/4 c water or broth

    Throw in crockpot potatoes first, seasoned chicken then water cook about 6 hrs low

    Sometimes I add in fresh lemon juice if I have it and the taters come out wonderful.
