Slice into 3/4 inch slabs, make several small slits in each piece and stuff a chunk of raw garlic in each opening. Brush with olive oil, season and roast at 425 degrees for 30 minutes. Put slices of tomato on top and continue roasting for another 15 minutes.0

Simple eggplant lasagna rounds
Individual servings
Place 1/4 inch thick Slices of eggplant place on plate and
microwave until done to your satisfaction (around 5 min)
Top with ricotta (or cottage) cheese, slices of precooked Italian sausage and canned marina sauce.

I love eggplant. Since I have had a gastric sleeve, and even before that trying to make it healthier, I bake it. I just rub some olive oil on it and then bread it with Italian bread crumbs. Then you can add a little spaghetti sauce and low fat mozzarella cheese, oh so yummy. I also like it grilled and sautéed with other vegetables. Pinterest has a ton of recipes for eggplant as well.0
