    I love soups - I make them often to get my kids to eat more veggies !

    Last nights recipe was :

    - I sauteed chopped onion (in 3 tblsp oil)

    - combine all other ingredients and simmer 1 hour

    6 cups water _more or less depending on how thick u like the soup
    1 lrg butternut squash - cleaned,skinned and cut in inch pieces
    4 stalks of cellery - chopped (strings taken out)
    1 lrg carrot - cleaned and chopped
    2 - 3 cups broccoli - I skin the stems and use them as well
    1 hot pepper - optional if u like a kick :)
    1 chicken boullion
    - 1 tsp all spice
    - 1 tsp cinnamon
    - 1/2 tsp clove
    - 1/2 tsp ginger
    1/2 tsp nutmeg
    blk pepper to taste

    puree entire soup - put back in pot ( mix in a cup or bowl - 1/2 cup cold water with 1/2 an envelope of powdered non fat milk whisk and add to soup , stir till it starts to boil - Soup is ready

    Its all in the broth! The best soup is made by roasting the meat in a roasting pan rather than boiling it in a pot. I'll use salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper. Its incredible. Well that is for chicken. Haven't tried anything else yet. I put lotsa veggies though- anything I can think of. I also like to do bean or lentil soup in the crock pot. Salt, pepper, cumin, garlic, onion and turkey bacon to flavor it. I usually add carrots and tomatoes to the lentils. It never turns out bad.

    In the eve,I brown a very small piece of beef,then put in crock pot.Add 3 C water& a couple bay leaves.Lots of S&P ! Keep on high till bedtime,turning on low & let it simmer all night.

    In morn,put meat & broth in fridge.You can make soup once most fat is removed from meat & broth. Put in slo cooker along with 2-3 cans of beef broth,canned small dice tomatoes,diced onion,celery & carrots.After a couple hrs,add all the veggies you want. I use cabbage,beans,mixed veggies,2-3 peeled diced turnips.I don't use broccoli,as we don't care for it after long cooking.I add thyme,a small pinch of cinnamon. The longer it cooks,the better it is.Freezes great in zip lock bags or containers.

    This post just made me hungry for my favorite:

    Pumpkin Coconut Curry Soup

    1 tbsp coconut oil
    1 cup chopped onions
    2 clove garlic, minced
    3 cups chicken broth
    1 tbsp curry powder
    1/2 teaspoon ground coriander
    1/2 teaspoon crushed red pepper flakes
    1/2 teaspoon cinnamon
    1/2 teaspoon allspice
    1/2 teaspoon ginger: or a little grated ginger if you have it
    1 (15 ounce) can 100% pure pumpkin
    1 cup light coconut milk

    Saute onions, garlic in coconut oil.
    Mix all except pumpkin and coconut milk in large saucepan.
    Heat until veggies are softened.
    Add pumpkin.
    Whiz with immersion blender.
    Add coconut milk.
    You can add some sweetener and S & P to taste.

    Lots of great ideas here. Cold snap headed my way today.
    Gonna make some for lunch today :)
