    sounds sooooo good! my husband's birthday is tomorrow and i am making him a red velvet cake from scratch - not 80 calories, if you know what i mean! i'm going to make some of these cupcakes for myself! thanks for sharing!

    we celebrated my daughter's first birthday on saturday and i made a batch of these. i used strawberries in place of the pineapple. she loved every bite and so did everyone else! i sent two home with my mother in law for her and her dh and she confessed to me today that they didn't quite make it home. lol i also saved the extra topping and my kids are eating it as a fruit dip with apple slices. yum. anyway, thanks SO much for posting. this is a treat yummy enough for birthdays and healthy enough to have hanging around the house two days after. genious.
