Turkey Sausage Quiche

Basic Recipe:
1 packaged sausage roll
8 eggs
1/4 cup low fat milk
3/4 cup cheese
Veggies to taste

Today's yummy goodness:
1 Jennie O breakfast sausage roll
8 eggs
1/4 cup low fat milk
3/4 cup Sargento Mexican cheese blend
1 cup green pepper chopped small
1 cup red pepper chopped small
1/4 cup onion chopped small
3 chipotle peppers in adobo sauce chopped small
1/4 cilantro
Cooking Spray as needed

1. Preheat oven to 350F
2. Cook turkey sausage according to package directions
3. Saute over medium heat green pepper, red pepper, onion and chipotle peppers until tender. Use cooking spray to aid in saute
4. Wisk eggs, milk and cilantro together until well mixed
5. Spray muffin pan with cooking spray for a light even layer
5. Combine turkey sausage and veggie mix and evenly spoon the mixture into the muffin pans
6. Add cheese to each opening
7. Evenly spoon egg, milk, cilantro mixture into each opening

Bake for 20 mins or until firm.

Each quiche is 163 cals, 2 carbs, 9 grams of fat, 15 grams of protein.

I ate two of them with fresh pico de gallo and light sour cream. Delish!!!

    This is the brand most people I know would be familiar with. I dont eat pork so I do not buy it.

    I make version of this ALL the time, it is seriously one of my favorite go to breakfast recipes!! I love making more vegetarian friendly versions (with mushrooms and spinach for my boyfriend) and bacon versions and....You get the idea!! Great post!

    Made some for tomorrow morning... less cheese, ham instead of sausage, and onion. Used 9 eggs total too. Comes to 96 calories each. We'll see how they turn out...

    very nice!!! I am doing them again tomorrow so I have some in the fridge for the rest of the week. Going to use steak instead of sausage to try.

    Oh I forgot to post. They turned really well. Full recipe I used was

    9 eggs
    1/4 cup 2% milk
    7.5oz of diced ham
    40g of onions
    56g of shredded reduced fat cheddar

    96 calories 1g carb 5g fat 9g protein

    I had to use liners and it got messy though (my muffin pan is a bit damaged), lol.

    Dont know about freezing them but I have had them for 2 days in the fridge and they are still good. I would imagine 4-5 days at best.
    I think I will run out tomorrow but the new batch will be ready for the next day!

    I heat them in the microwave on power level 5 for 60 secs then full power for 15 secs.
