    So I was innocently walking past a Dunkin Donuts the other day :blushing: and I saw their signs for all of their delicious pumpkin seasonal goodies.

    I've seen a bunch of recipes for pumpkin bread but I'm wondering if anybody has any recipes for...

    Pumpkin Muffins?
    Pumpkin Lattes?
    Oh, and does anyone have any "healthy" version of *really yummy* pumpkin pie???

  • Havent tried them yet-- but here is a recipe for Pumpkin Cookies I've been dying to try...did I mention they're THIRTY-FIVE calories each!?

    1 cup canned pumpkin
    1 egg
    1/2 cup plain yogurt
    3 tablespoons honey
    1 1/2 teaspoons vanilla extract
    1 2/3 cups all-purpose flour
    1 1/4 cups Splenda granular
    1/2 teaspoon baking soda
    1 teaspoon baking powder
    2 teaspoons cinnamon
    1/2 teaspoon ginger
    1/2 teaspoon nutmeg
    1/4 teaspoon salt

    1Preheat oven to 350 degrees F. Combine the first 5 ingredients in a large mixing bowl. Stir until blended. In another bowl combine all of the remaining ingredients. Slowly add the dry ingredients to the pumpkin mixture stirring until well blended. Cover cookie sheets with aluminum foil, and lightly grease with a non-stick cooking spray. Drop small spoonfuls of dough onto the sheet and bake for 10-15 minutes. Allow to cool. I love to refrigerate these cookies and serve them cold, but I'm sure they would taste great at room temperature as well.

    Despite the fact that you are a Florida Gator (I'm Tallahassee born and bred) I found a muffin recipe that looks pretty delicous. In my pumpkin escapades I've never tried muffins, so no promise if they're any good or not.

    Pumpkin Spice/Carrot Muffins

    Ingredients
    1 15 oz. can Libby's Pure Pumpkin Puree
    1 18 oz. box Betty Crocker Super Moist Carrot Cake or Spice Cake Mix



    Directions
    Combine pumpkin and cake mix. Spoon into 18 cupcake liners and bake at 350 degrees for 20 -25 minutes. NOTE: The batter is very sticky and leaves a rough textured top on the muffins, but they're light and delicious. Makes 18 muffins.

    Number of Servings: 18

    I just tried this recipe from www.sparksrecipe.com and it is great! I used the spice cake mix instead of the carrot and added just a little cinnamon, ginger and nutmeg. 128 calories when divided by 18.

    The original recipe said 12 servings but I had enough batter for 18 full sized cupcakes. There are lots of variations of the recipe on the www.sparksrecipe.com

    Ingredients

    One box Angelfood cake mix
    2 tbsp pumpkin pie spice
    1/2 the water called for on mix
    1-14 oz can pumpkin (DO USE the premixed pie!)
    Directions

    Mix cake mix with 1/2 the water called for on the cake label.
    Add pumpkin pie spice
    Add pumpkin
    Mix completely and pour into tube pan
    Cook as directed on box
    Makes 12 servings and can be topped with coolwhip free.
