I need help marinading chicken. Thing is im looking for recipes that are no to low carb and where the flavor really sticks. My only experience with marinading was I put some mojo on some chicken but only for like 30 minutes prior to cooking it. The flavor from the mojo did not stick. If I put it the night before would the flavor have stuck some? Anyway just looking for easy no to low carb marinades to chicken. Ive thought of perhaps using italian dressing, or even orange juice yet but I havent done it.

the longer you marinate something the more the flavor will be infused - marinate for a couple hours at least - if I am doing something like a roast on the barbecue I like to try to inject the marinade and let it sit over night - turn it every couple of hours

greek lemon chicken is a good marinade also - lemon juice a little bit of olive oil, oregano and fresh garlic - if you cut the meat into smaller pieces it will marinate faster - I like the greek lemon chicken cooked on skewers so the the pieces are small - you could also use pork or beef tenderloin for this

I usually just put olive oil then mix up rosemary, sage ,thyme a little salt, pepper ( can add garlic & onion too ) then rub on chicken

Unless the marinade has a really strong flavor, the longer the better -- it gives time for both the flavor to infuse and for the acids in the marinade to tenderize the meat. When I can remember to start marinading the day before, the results tend to be crazy good.
