    I find that covering the pan for a brief period while they're cooking will help develop a nice crust on them. I also add finely chopped onion and use salt, pepper ,paprika & a touch of "slap yo mama" seasoning on them. Occasionally, I will shred the potatoes and shape them into patties for the more hash browns version as opposed to the home fries version.

    I use coarse kosher salt, or throw a bit of cayenne, or italian seasoning on mine.
