In a sauce pan, combine water, white sugar and cranberries, cook over medium heat, stirring regularly for about 15 minutes until all berries are burst and mixture has thickened. Set aside to cool.

Preheat oven to 350 degF. Prepare 9X13 cake pan, grease well (or use pam) or cover bottom with tinfoil and spray sides.

In a large bowl, mix cake mix, egg replacer (= 2 eggs) and melted margarine. Add oats, spices and brown sugar, mix again. Hold back about 1.5 cups of batter, spread remainder evenly in bottom of baking dish. Push down and make it even across bottom of dish. Spread cooled cranberry mixture across base evenly. Take remaining batter and drop in small pinches evenly over top of cranberry mixture.

Bake at 350 degF for 35-40 minutes until top batter is golden brown. Cut into 24 squares for serving sizes calculated above.


Could easily be adapted to be made healthier/lower calorie by alternating sweeteners and possibly substituting some apple sauce for the melted margarine.
