How to deal with a cheat day?

I sometimes go under a few hundred a day (I am currently trying to maintain my weight and will be heading into a bulk in a few weeks). If i go under my maintenance calories for a few days I always make up for it on the weekend-- for example today i have to make up an extra 1200 calories that i didn't take in during the week. Since i need about 3000 calories/day to maintain weight, today I plan to eat about 4200 calories to make up my deficit or i will lose weight-- which i don't want)
When i bulk, I will never go under my daily calories. When trying to lose (and an occasion/outing with friends with lots of food is on the horizon), i try to bank calories (or even better not worry about it too much as long as it doesn't become habit). Life happens.0
