    asparagus, steamed with basalmic

    broccoli and cauliflower, steamed then covered in cheese soup sauce

    baby carrots, steamed then sprinkled with tarragon

    Zucchini and squash, grilled

    Celery and carrots, raw with hummus!

    In the summer, I LOVE fresh sweet corn!

    Good question....

    The vegetables I tend to buy are:

    - carrots
    - celery
    - spinach
    - zucchini
    - green peppers
    - broccoli

    And....I prefer almost all of them raw.

    raw edamame (soy) and chickpeas (garbanzo) beans, with some italian dressing, mmmm!!!

    steam broccoli and/or carrots

    french-cut green beans with sliced toasted almonds

    Well I'm sitting here eating my lunch which consists of (all raw) brocolli, bell peppers, and mushrooms. I'm not a fan of carrots, I liked them cooked just not raw, I love celery, cucumbers, cauliflower, cherry tomatos, bell peppers are probably my fav raw veggie. I love corn too.

    Sweet potatoes with a little spray butter and brown sugar.== Got one in the oven right now.. : )

    asian sesame or italian dressing marinated grilled asparagus
    potatoes - any kind!
    sweet corn kernels
    green beans with a little bit of smart balance, salt, pepper and garlic
    glazed carrots
    peas

    Broccili, carrots, cauliflower steamed with a cheese soup dressing.
    Squash grilled or in a pan with a little olive oil and a sprinkle of marjoram and savory.
    Sauteed Mushrooms (in olive oil) I actually eat that for meals sometimes, lol.
    Sauteed in olive oil with a little salt and pepper squash, green red and yellow bell pepper, onion and mushroom ( I call it a vegetable medley)
    Asparagus in Holandaise sauce with chopped almonds

    Raw celery with peanut butter
    Raw Snow Peas
    Fresh Raw green beans

    I could go on all day:laugh: I love my greens:bigsmile:

    Broccoli, carrots, and asparagus are also excellent prepared this way.

    Corn: canned, frozen, fresh, love it all.

    Broccoli and Cauliflower: both steamed, plain is good, but I do love those single packs you can buy with cheese (great snack!)

    Spinach: sauteed with olive oil and garlic

    Zucchini and Summer Squash: sauteed, grilled, fried, baked, so many ways, they all come out good. Typically with just a brush of olive oil and garlic salt- perfect.

    Mushrooms: fresh or canned, yum. I add mushrooms to almost everything- pizza, salad, whatever dish I'm cooking.

    I've discovered that vegetables can be really good just steamed, without anything on them, if they are cooked right. Under or overcooked they taste gross, but done perfectly, they have enough GOOD flavor on their own to not need anything. Granted, I've only ever managed to get them that way on rare occasion, but when you can... incredible.

    I could pretty much chow down on raw red bell peppers all day. God's candy! I also love peas, corn, and broccoli.

    I love roasted brussels sprouts!!!!!!!!!! Roast them in a cast iron covered pot at a high temp for a long time with lemon zest, olive oil, and cubed pancetta. Yummmmmm. But I've really never met a veggie I didn't like.

    that actually sounds good, perhaps i will give them another try..last time i had them was boild at a buffet and they were sooooo nastey!

    Spaghetti Squash!! It's amazing. I love it as a pasta substitute or as a side dish plain, with a little pepper added.

    also love corn, especially on the cob in the summer fresh from the farm :D

    Obviously portion control is more my issue :laugh:

    Oh boiled brussel sprouts are not good! I half mine, sprinkle a little olive oil, salt and pepper, and then roast them in the oven till they start to cripsy up a bit!
