Different calories burnt on MFP stepper

Some days I'll walk thousands more steps but would have burned less calories than other days when I don't walk as much but burn more. Why?
The only thing I can think of it walking up and down hills but surely it's not that accurate?

Calories burned is about intensity not just distance ..so speed and gradient and heart rate matter
That said I don't know what MFP stepper is ...I have a fitbit and get different calories for the same distances regularly0
