I love my crockpot so. I've saved a bunch of these recipes, so thank you all! Here are some of my favorites:
Easy Chicken and Dumplings
3-4 chicken breasts
2 cans of low sodium/fat cream of whatever soups
1/2 bag of baby carrots
1 onion, chopped
2 T butter (optional)
S&P to taste
Chicken broth to cover
Throw it all in your crock and cook on low 7 hours. Shred the chicken, add a can of refrigerator biscuits (torn up and pushed down into the broth) and cook on high and add'l hour. So good.
Guinness Corned Beef
3-4 lb. corned beef brisket with spice pouch
1 c. brown sugar
Enough Guinness to cover
Low for 8-10 hours. Add cabbage in the 2 hours if you're into that kind of thing, which I am.
Awesome Pot Roast
5 lb. roast
1 can golden mushroom soup
1 can cream of mushroom soup
1 package onion soup mix
1 1/2 c. beef broth
1/2 bag baby carrots
Mix broth with onion soup mix and creamed soups and pour over roast and carrots. Cook on low 8-10 hours.

Here's mine! I don't know the stats, but it's one of my favorites.
2 raw Chicken breasts
2 cans condensed Broccoli Cheddar soup
2 cans Whole Sweet Corn
Throw everything in together in the morning on low. At lunch time you can cut/dice/shred/whatever the chicken and put it back. At dinner you have a yummy, creamy soup!

I made this on Saturday night and it tasted even better today than it did Saturday night! I used tortilla chips but you can pour over brown rice.
