Tilapia Ideas Needed!

I recenly found flounder filets at Sams. I love flounder. I just fixed this for lunch and it was great. I cooked a can of Bumble Bee white crab meat with onion and green onion in a frying pan sprayed with Pam, mixed in a couple of tablespoons of homemade wheat bread crumbs right at the end and a tiny little bit of season all. I layed the flounder filets (4) out in a pan on alluminum foil, seasoned with season all and topped with the crab stuffing mixture. I put a sprinkle of bread crumbs on top and a few tiny dabs of diet margarine on top (2 teaspoons for 4 filets). Bake for about 15 minutes. That makes two servings, 2 filets each serving for about 251 calories per serving. Yummy!!! I used flouder but you could just as easily use tilapia.0

I just had tilapia for dinner tonight. Found a recipe on skinnytaste.com (Skillet Cajun Spiced Flounder with Tomatoes). Tilapia can be substituted for the flounder. Very good and easy. Ingredients include olive oil, onions, garlic, bell pepper, tomatoes and cajun spice seasoning. I only had creole seasoning and used it instead of cajun....still turned out great.0

I'm trying this one tomorrow night. Fingers crossed my husband likes it!
Parmesan-Crusted Tilapia
Ingredients
3/4 cup freshly grated Parmesan cheese
2 teaspoons paprika
1 tablespoon chopped flat-leaf parsley
4 tilapia fillets (about 1 pound total)
1 lemon, cut into wedges
Directions
Preheat the oven to 400 degrees . In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.

I season mine with a spicy rub (cajun seasoning or a spicy lemon pepper), bake and then top it with a cilantro pesto (blend cilantro, garlic, pine nuts, garlic, olive oil, salt and pepper)...it is so good!0
