I am going to make them now. One question, do you think you can freeze them? I am by myself and if I have them on the counter I will be tempted to eat them all.

I am not sure how they would freeze. What you could do is put them in cupcake liners and freeze the batter uncooked. Then bake them whenever you are ready.

They did not rise properly. They were very dense and no flavor. I am going to try to toast one today and maybe spread it with a little Smuckers low sugar jelly.

After you make them let me know how it worked out for you.
