    Swiss Steak

    4 beef cube steaks
    1 tbsp canola oil
    1 medium onion chopped
    1 celery rib with leaves, chopped
    1 garlic clove minced
    1 can stewed tomatoes cut (14-1/2 oz)
    1 can (8oz) tomato sauce
    1 tsp beef bouillon
    1 tbsp cornstarch
    2 tbsp cold water

    Brown cube steaks in oil over medium high, remove and set aside. saute onion, celery, garlic for 3-4 min. add the tomatos, tomato sauce and bouillon. return steaks to the pan and bring to a boil. reduce heat and cover and simmer for 1-1/4-1-3/4 hours or until meat is tender. combine cornstarch and water until smooth, stir into tomato mixture. bring to a boil, cook and stir for 2 min or until thickened

    4 servings. 1 steak with 3/4 cup sauce 255 calories, 8 g fat, 746 mg sodium, 18g carb, 3g fiber, 28g protein

    Tuna Casserole

    2 cups elbow macaroni
    1 can (12oz) solid white tuna drained ( i prefer the package)
    1 can (8oz) tomato sauce
    4 oz red fat cream cheese cubed
    1 small onion finely chopped
    1/4 tsp salt
    1/2 tsp dried oregano

    cook macaroni and drain. In a large bowl combine all ingredients. transfer for a 2qt baking dish coated with cooking spray. cover and bake at 350 for 20-25 min

    1-1/2 cups equals 334 cal, 9g fat (5 sat), 851 mg sodium, 33g carb, 2 g fiber, 29g protein

    Texas Ranch Style Stew

    1 cup small shell pasta
    1 lb lean ground beef
    1 medium onion chopped
    1 medium green pepper chopped
    2 garlic cloves minced
    3 cans (5-1/2 oz) red sodium v8 sodium
    1 can(15oz) ranch style beans or baked beans undrained
    1 can (14-1/2oz) southwestern diced tomatoes undrained
    1/2 frozen corn thawed
    1 tbsp chili powder
    1/2 tsp salt
    1/4 tsp pepper

    cook pasta. in a large skillet cook beef, onion, green pepper, and garlic over medium heat until meat is no longer pink, drain. stir in the remaining ingredients, bring to a boil. reduce heat, simmer, uncovered, for 10 min, stirring occasionally. drain pasta, stir into stew. 6 servings

    1-1/3 cup equals 307 calories, 7 g fat (3 sat), 886 mg sodium, 37 g carbs, 7 g fiber, 22 g protein

    Crunchy Peanut coleslaw

    1 cup red fat sour cream
    1/2 cup ff mayo
    1 tbsp sugar
    1 tbsp tarragon vinegar
    1/2 tsp salt
    1/4 tsp white pepper
    4 cups chopped cabbage
    1 cup coarsely chopped cauliflower
    1 cup chopped celery
    1/2 cup finely chopped onion
    1/4 cup finely chopped green pepper
    1/4 cup finely chopped cucumber
    1/2 cup chopped peanuts

    in a small bowl combine the sour cream mayo sugar vinegar salt and pepper until blended. in a large bowl combine the cabbage, cauliflower, celery, onion, green pepper, and cucumber. add dressing and toss to coat. sprinkle with peanuts

    8 servings
    3/4 cup equals 121 calories, 7 g fat, 323 mg sodium, 14 g carbs, 3 g fiber, 4g protein

    Philly cheesesteaks

    3 oz raw lean filet beefsteak
    1 hot dog bun
    1 slice fat free american cheese
    1/3 cup sliced onions

    slice the filet into strips. cook onions over med-high for about 5 min. cook filet strips on med-high for 1-2 minutes flipping halfway though cooking. place cheese on top of the meat while still in the pan and continue to cook until cheese melts. warm or toast your bun. combine and enjoy! 1 serving 301 calories 9 g fat, 588mg sodium, 28 carbs, 0.5 fiber, 7g sugar, 26g protein

    ever tried making these with venison? cuts out a lot of the fat and is so delicious!!!!!

    Current obsession:

    - 1/2 cup canned pumpkin
    - 1 egg white
    - cinnamon, vanilla and sweetener

    Mix all together and microwave for 2-3 mins. Top with a little sugar free syrup and fat free whipped cream- delicious and easy (surprisingly satisfying) for around 120 cals!

    let's see... my favorite magazine is Cooking Light... you can't find a better food magazine out there in my opinion. Also, there are some really great websites like eatingwell.com, skinnytaste.com (another fav), cookinglight.com. As far as books, I've used the 'eat this, not that' series- really great bc it has a lot of pics. I also have a few 'fix it and forget it' books- aimed toward the slow cooker- I have a diabetic version and a healthy cooking version. people seem to really like the hungrygirl books, but I'm not a huge fan. I
