Fat Free Banana Bread
I found a recipe online and tweaked it. I entered all the ingredients into the recipe creator and found the nutrition information. This can be made in a loaf pan and divided into 12 slices each serving being 1 slice. I made it in mini muffin pans so the serving size is 4 mini muffins!
Calories: 114, Fat 0, Sodium 242, Protein 2, Carbohydrates 21
1 1/2 cups flour
1/2 sugar
1 1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 1/2 cups mashed bananas (3 medium)
1 tsp vanilla extract
1/3 cup unsweetened applesauce
6 Tbs liquid egg whites (2 egg whites)
Bake at 350 degrees. Mini muffins take 20 minutes. I had originally added 1/2 tsp of nutmeg but the flavor was very pronounced. You could add if you want a little more flavor. Walnuts would be a great additions, too but would add fat and calories.

My roommate and I made this last night and it turned out really well!! I substituted Splenda with sugar and it cut out a lot of calories, but I left everything else the same. Came out really good and around 90 calories a slice. Thanks for the recipe!!0
