OPINIONS ON HOW IT TASTED, ETC: My kids can eat this all day. They love green beans and I thought I would try it this way because we love garlic.
We add garlic to everything so I thought that this would be the easiest to post. My mom makes a roasted garlic spread with some oil and tiny tiny bread slices, if anyone is interested I can ask her how she does it. BUT it is very bad for you! I mean VERY bad, so that is why I didn't use that for my entry.0 -

If you aren't going to use that for this challenge, can you message me the recipe? Maybe I can get the kids to eat it. They like it in their subway sandwiches and that it. Thanks

Ooooh looking forward to viewing these, I love garlic, add it to almost every savoury dish I make. If I can think of any of my recipes that are more that just adding it to anything i'll post.0

got this from an Italian friend - very basic but her gran used to cook it all the time:
spaghetti
garlic finely chopped (as many cloves as you dare - the more the better)
couple of fresh chili peppers finely chopped
olive oil
lots of parsley finely chopped
cook pasta, cook garlic and chili peppers in olive oil until smelling divine, throw in the finely chopped parsley
serve with parmesan.
Calories mostly depend on how much oil (it's Italian - it screams for plenty of oil), pasta and parmesan you add.
I sometimes vary this with a finely chopped mushroom and maybe an anchovy. Takes barely anytime to cook so a great one fot the time-pressed.
ps. love the idea of a cooking challenge.0 -

Garlic Portabello Mushroom 'Burger'
Serves 1- approx 200-220 cals each.
Recipe:
-1 ciabatta/rustic/artisan bread roll- approx 120 cals or adjust count accordingly.
- 1 large portabello mushroom cap, cleaned
- 1 fat clove garlic, peeled & sliced in half
- 10 sprays 1 cal olive oil spray
- 1 handful rocket leaves (arugula in US) or watercress
- 2 tbsp low fat/extra light garlic cream cheese (I used boursin)
- Ground black pepper
- Red onion, sliced (about 5 rings)
- Jalapeno peppers (if you want a bit of heat).
Method:
1. Top the portabello mushroom with the cheese & black pepper. Grill (Broil) for 5-8 minutes until cooked & bubbling.
2. Cut the bread roll in half, rub each half liberally with the garlic clove- this rubs on the lovely garlicky goodness! Toast the roll lightly and spray with the oil spray.
3. Assemble the 'burger'. Breadroll-mushroom & cheese-onions-jalapenos-red onion-breadroll.
This is easy, quick, low fat and yummy- good for the BBQ.0 -

Pasta sauce & topping
Ingredients:
1 tin chopped tomatoes or plum tomatoes (22 cals)
garlic finely chopped - I add two-three cloves, but add to taste (8-12 cals)
1/2 tsp sugar (9 cals)
splash (about 1 tbsp) balsamic vinegar (15 cals)
oregano & basil - add to taste, if fresh, add later in the cooking
1tbsp tomato puree (14 cals)
1 tsp olive oil (40 cals)
1 onion (45 cals)
10 mushrooms sliced (45 cals)
more garlic - another 2 cloves finely chopped (8 cals)
spray oil
Total - 206-210 cals, give or take!
Recipe:
Saute onion & half of the mushrooms
Empty tin tomatoes in pan along with tomoato puree, balsamic, sugar, sauteed mushrooms and onions, dried herbs
Cook for 10 minutes on hob, adding water if necessary
Add olive oil and any fresh herbs, cook for remaining five minutes
In the last five minutes, saute the remaining slice mushrooms and finely chopped garlic
When ready, I usually stir in the sauce with the pasta and top with the garlic mushrooms. Yum.
Serves - 2-3 (It serves 2 adults and 2 young children in my house and they wolf it down)
Takes - 15 mins (while the pasta is cooking)0 -
