    Ingredients
    Generic - Applesauce Unsweetened 20 oz.
    Betty Crocker - Super Moist Triple Chocolate Fudge Cake Mix Only, 1 package

    So is that all you use or do you still add the eggs? and is it 1 package and the whole 20oz applesauce?

    I bake them and do not ice them making them about 145 or so cupcake with no icing. I freeze them and then take them out microwave and put a little tiny bit of canned whipped cream on top while warm , so good.

    have you ever heard of diet soda cake? (I have made it in a cake pan but I dont see why you couldn't convert it into a cupcake) Just mix 1 box of cake mix with 1 can of diet soda (keep dark mixes with dark soda or even mix!) and bake at 350! I top mine off with whipped cream.. my favorite combo is a chocolate cake mix with diet cherry coke!

    i JUST finished making rainbow cupcakes using white cake mix and sprite zero! around 100 calories per cupcake. made my own frosting too - fat free cool whip with fat free/sugar free vanilla pudding mix. so good!

    Use a box of pillsbury sugar free devil's food chocolate cake and one can of diet soda. Diet cherry coke or hansen's black cherry diet soda or diet dr. pepper would work. Mix it together, makes 24 cupcakes. Bake at 325 for 18 minutes or so. 60 calories 0 carbs.

    Servings: 26 • Serving Size: 1 cupcake • Calories: 141

    * 1 1/2 cups cake flour
    * 1 cup white whole wheat flour
    * 1 cup sugar
    * 1 tbsp unsweetened dutch-process cocoa
    * 1 tsp salt
    * 1 tsp baking powder
    * 1 tsp baking soda
    * 1 tsp white vinegar
    * 1/2 cup unsweetened apple sauce
    * 1/4 cup butter, softened
    * 1 egg
    * 2 egg whites
    * 2 tsp vanilla
    * 1 1/3 cup light buttermilk
    * 1 tbsp red food coloring

    Preheat oven to 350. Line cupcake tins with liners. In a large mixing bowl, stir together flours, salt, cocoa, and baking powder. In another large bowl beat sugar, applesauce and butter. Beat in eggs and vanilla. In a separate bowl mix baking soda and vinegar. Add half of the dry ingredients into the egg mixture, mix well. Add buttermilk, red food coloring and mix well. Add the remaining dry ingredients and fold in vinegar and baking soda. Pour in prepared cupcake liners 3/4 of the way. Bake 20-25 minutes or until a toothpick inserted comes out clean. Cool, then frost with low fat cream cheese frosting. Makes 26 cupcakes.

    Low Fat Cream Cheese Frosting

    * 8 oz 1/3 fat Philadelphia Cream Cheese
    * 1 cup powdered sugar
    * 1 tsp vanilla extract

    Beat together cream cheese, powdered sugar and vanilla until smooth.

    I made diet cupcakes the other day. i took half the box of cherry chip cake mix and half of a can or diet dr pepper. mixed it together it mad 12 cupcakes. They were about 100 calories plain. My son had real icing on his and it bumped them up to over 200 calories, i put some plain yogurt and light jam on top of mine making it 140 calories. I tasted a piece with the icing and mine was way tastier. It was my first time making them and i will try it again.

    My favorite cupcakes- 1 box of Angel food cake + 1 can crushed pineapple. Thats all it takes! they come out so light, fluffly and sweet!

  • I got this from Working Mother magazine a long time ago and I've made it alot. It is to die for! My two boys are not big on veggies, but they love this recipe. You can't taste the zucchini at all, if you are not a big fan of zucchini. It makes really moist chocolaty cake. I hope you enjoy!

    Stats: one serving = 190 calories, 36 grams carbs, 3 grams protein, 4 grams fat (0.5 grams saturated fat), 24 milligrams cholesterol, 329 milligrams sodium, 1.1 graams dietary fiber.


    Chocolate Zucchini Cake

    2 cups all purpose flour
    2 cups sugar
    1/2 cup unsweetened cocoa powder
    2 teaspoons baking powder
    2 teaspoons baking soda
    1 1/2 teaspoons ground cinnamon
    1 teaspoon salt
    3/4 cup non-fat vanilla yogurt
    1/4 cup vegetable oil
    2 large eggs
    2 teaspoons vanilla extract 2 cups grated zucchini
    Powdered sugar for garnish (usually skip this)

    Preheat oven to 375°. Coat 9 x 13” baking pan (OR you can make cup cakes with the same batter). In a large bowl, whisk together dry ingredients. In another bowl, mix wet ingredients with electric mixer and then combine. Stir in zucchini, transfer batter to prepared baking dish, spreading evenly. Bake for 30 to 35 minutes or until top feels firm when lightly pressed in center. Cool completely and then cut into squares, dust with powdered sugar.

    This sounds really good. Do you prepare the cake the way it is directed? What's the calories for this also?
