I have about 400 cal left for dinner so I'm probably going to do stuffed chicken w/ a salad on the side. I read someone's idea here to cook w/ laughing cow cheese, and it's AMAZING. 1 chicken breast + 1 wedge of tomato basil cheese + fresh chopped basil = awesome!!

Bought farm fresh, first of the season corn on the cob at St Jacobs Farmers Market this morning, so that with a piece of grilled chicken. I love the tastes of summer!

A grilled portabella mushroom "burger" w/ Swiss cheese, and a splash of low sodium soy on a 80 cal wheat bun. Sliced cucumbers, and a romaine lettuce salad w/ Newman's Own Raspberry & Walnut dressing. And some peaches in extra light syrup.

I was going to have eggs, but decided that I would make a LC Tortilla Pizza... I eat it often because it's fast and it's under 200 calories. I've done the cauliflower pizza, but I kind of like this better because it goes together faster...

Red lentil soup. I know I'm probably the only idiot who eats soup in the middle of summer, but I love it! And I have been craving this forever. I'll have a salad too, and probably some fruit for dessert. Yum!

The other day I had "pizza" too!

    Crust:
    1 Flat Out Original-Light (90 calories)
-Spread a little Olive Oil on the flat out and put it directly on the oven rack without toppings at 350 for like 7 minutes or less

    Toppings:
Tomato Sauce, I used Great Value Brand only like 1/8 cup- (About 20 calories)
Trader Joe's No Fat Feta 1/2 Cup- (70 Calories) or 1/4 cup for 35 calories
Boneless Skinless Chicken Breast cut up into small pieces- (80 Calories)
    Artichoke Hearts (30 calories)
    Tomato Slices (10 calories)

After the crust comes out of the oven fairly crispy with a little brown, add all the toppings however you want and put it back in the oven for another 5-10 minutes or until it is how you like it!

300 Calories or less depending on how much cheese you add! :) You could also use low fat or no fat shredded cheese and get about the same calorie count. Add whatever veggies you like! About to put this on the recipe thread!
