    Ok, so I am still alive sorry.. Week has been a bit hectic but I have been on my tasks.

    I have gotten EVERYTHING done.. and under in all the right places..

    100 mile challenge and Recipes...

    If dk_runs, Gary1077, and ycc1964 complete their planned miles and the rest of us complete 5 extra miles each - we will meet our 100 mile goal!! Some of us are going to have a lot of walking to do on Saturday!! We are currently at 24.76 miles.

    I have recipes from about half the team. Please post your favorite in here by Saturday!

    Avocado-Edamame Salsa

    If your guests or family members don't care for olives, leave them out. This salsa is great with reduced-fat tortilla chips and as a garnish for quesadillas or burritos.

    1 cup frozen petite corn kernels, thawed
    2.25-ounce can sliced ripe olives, drained
    1/2 red bell pepper, finely chopped
    1/3 cup sweet onion, finely chopped
    2 teaspoons minced garlic
    1/4 cup prepared light vinaigrette salad dressing
    1/2 teaspoon black pepper (optional)
    1 avocado, diced
    2/3 cup shelled edamame, thawed
    Pepper to taste, if desired

    • Add corn, olives, bell pepper, onion, and garlic to a medium bowl.
    • Pour light dressing into the corn mixture and toss to blend. Add pepper to taste, if desired. Cover and chill in the refrigerator all day or overnight.
    • Right before serving, add the diced avocado and edamame into the corn mixture and stir.

    Yield: Four 1/2-cup servings
    Per serving: 190 calories, 6.5 g protein, 19.5 g carbohydrate, 12 g fat, 1.9 g saturated fat, 6.6 g monounsaturated fat, 3 g polyunsaturated fat, 1 mg cholesterol, 5 g fiber, 254 mg sodium. Calories from fat: 52%.

    I'll do a mile tonight here @ work. Starting tomorrow I'm off but for only one day. I'll try to get 1 1/2 miles then and another 1 1/2 miles on Friday. I MIGHT be able to get a mile in Saturday after work if I feel like it. I'll do my best for the team.

    Under calories, over on water, & 50 situps complete. Sorry, no way my knees will allow mountain climbers. Don't know if it'll help or not, but I'll do 50 extra situps instead.

    Evening all-
    Hope your day was smashing! My day started with a smashing headache which thankfully went away by the end of the day. Love those liqua-gel ibuprofen tabs!

    My daily report:
    50 mountain climbers = DONE
    50 crunches = DONE
    8 glasses of water = DRANK
    Calories = UNDER (just barely to be fair)
    And...
    1 mile towards our 100 mile goal.

    PS all! If you didn't see the message from Gary6030, here's the deal on the 100 mile team challenge:

    AUGUST CHALLENGE NEWS UPDATE! The 100 mile team challenge can be done anyhow you like run, jog, walk, bike, swim. Doesn't matter. IT DOES Need to be extra. So if you typically bike 10 miles a day anything above that would count. Remember it's all about extra and pushing more! Keep up the great work.

    So, I say whatever way we can get these miles in, DO IT!

    Crock Pot Sour Cream & Onion Chicken:


    Ingredients
    4 chicken breast halves
    1 12 oz can of low fat cream of mushroom soup
    1/2 cup fat free sour cream
    1 1/2 cups water1 packet of onion soup mix




    Directions
    Place thawed chicken into crock pot or slow cooker. In a medium bowl, mix all the other ingredients together. Pour mixture of chicken and cover. Cook at low setting 6-8 hours or higher setting for 4-6 hours.

    Notes: This has got to be one of the easiest meals to put together and has become a family favorite. It's very creamy and goes well with wild rice or potatoes. The recipe doubles nicely for larger servings.

    HI team I'm back from an awesome vacation. It was a little longer than we had planned and that would explain why I am just logging in to MFP. I did complete all last week challenges, under calories and drank lots of water,.. over 8 cups per day. Unfortunately I still weigh the same.. 276lbs. I think my eating habits have to get corrected asap! For the team, for my upcoming anniversary, and my brothers wedding! I will eat more salads and lay off the tortillas this week!

    Since I just got back.. I am just looking at the challenges for this week. Is it ok still if I do them through out the remainder of the week or have I goofed??

    Captain.. I hope I answered all questions you had for me!!!

    N E whoo.. I saw all the hard work the rest of the team has put in! Good job and keep it up!!!

    50 sit ups took me longer today and 50 mountain climbers done thank god for pain meds hopefully going to the dr tomorrow

    50 swimmers presses & 3 sets of 21's plus 1/2 mile toward the team 100...

    DONE!

    Who knew bottles of water could weigh so much???!?!?!?!! Whew!

    Under cals and over water - even on my anniversary! WOOT!

    Week 2 Day 3... (Wednesday)

    50 Sit ups - Done
    50 Mountain Climbers - Done

    60min kick boxing - extra done
    30min Wii Step
    Calories - Under
    Water - Way over

    Will do 2 miles today (Thursday) towards our 100.. and squeeze in the other 3 on Friday and Saturday...

    I have a question.. do any of you experience weight gain when exercising?

    All challenges complete for Mon, Tues, Wed, and Thurs
    All water consumed for Mon, Tues, Wed, and expect same for Thurs
    Mon, Tues and Wed Calories under.

    Extra walking towards 100 mile challenge
    Mon: 5 miles
    Tues: 3 miles walking
    1 mile swimming
    Wed: 10 miles biking, 2 miles walking

    Weight is the same, but body fat pinch test at gym shows overall reduction of body fat.... so that must be the reason for the need for smaller jeans...... again document.write('');


    Fyi, I will be without computer for the remainder of the week and will not be back till Monday

    Under calories
    only 5 cups of water today
    50 mountain climbers completed (didn't do the sit ups or crunches)
    I did get in an extra mile for the team though!

RIGHT AFTER HE GRADUATED FROM HIGH SCHOOL IN OHIO BOB WAS PREPARING TO LEAVE FOR COLLEGE OUT OF STATE WHEN HE WENT HIKING WITH FRIENDS AND FELL OFF A CLIFF. IT TOOK HOURS FOR HIM TO REACH A HOSPITAL AND SADLY THE LONGER IT TAKES TO GET HELP THE GREATER THE DAMAGE IN A SPINAL CORD INJURY.     Ok team, I completed 5 miles today. So my 10 miles plus 1 additional mile are complete. I'm sure I'll be able to come up with more before the end of the challenge. Go TEAM!!!!!
