Balsamic Seasoned Steak
2 tablespoons of balsamic vinegar
2 teaspoons of A-1 steak sauce
1/4 teaspoon of ground pepper
1 boneless sirlon steak (about 1 pound)
2 ounces of reduced fat swiss cheese
sauteed mushroom optional.
* In a small bowl combine vinegar and A-1 and set aside. Rub steak with black pepper. Place steak on broiler pan. Broil 4 inches from the heat.
*Turn, spoon half the steak sauce mixture over the steak, broil 5-7 min longer until meat reaches desired doneness.
*Remove steak to a cutting board and cut across the grain into 1/4 in. slices. Place on a foil lined baking sheet; drizzle with juices from cutting board and remaining steak sauce mixture. Top with cheese and broil for 1 min until cheese is melted.
Yield 4 servings
4 ounces of beef with 1/2 oz of cheese equals 190 calories, 8 g fat (3 g of saturated fat), 70mg cholesterol, 116 mg sodium, 2 g of carbs, trace of fiber, 26 g proein.0 -

We have 119.99 miles for our challenge!!!
Our top 5 mileage 'racker-uppers' were (in alphabetical order by username)... dk_runs, lanet7, pugs4eyes, teamkelly, & ycc1964! YOU ROCK!!!! They were responsible for 86.5 of the miles toward our 100!! I am ASTOUNDED!! Everyone else that logged miles - THANK YOU SO MUCH!! You made it possible to get us to that 100 mile mark and I am THRILLED!!!
But...
That may not do us ANY good as far as bonus points go because I AM STILL MISSING RECIPES FROM 5 OF YOU!!!
amsparky, Bounre, Jitteryspork, nrtenagrl, & ShannGall - I am not posting your names to rudely 'call you out' - I just need to make sure I try to reach you in every place possible. Please post the recipe here in the week 2 forum by 11:59 pm Sunday!! I will also be sending messages to you individually. It has come to my attention that some people may not have PC access and are only using the phone apps during the weekend. In that case - you can absolutely send me a message!!!
You don't have to hunt down the secret family recipe! Snag something off the internet and copy & paste, or even let me know what you had in mind and I will post for you!
Please remember - we are all depending on each other for support and for the bonus points!!! You each get a point for each day that you complete the exercise challenge. If everyone completes every challenge for all 6 days - we get 5 bonus points for the week. We had some illness and some communication issues this week - so we will not be getting the exercise bonus.
BUT WE CAN STILL GET THAT TEAM CHALLENGE BONUS!!! Gary made it very clear - there will be no more free passes. So if we don't get those recipes - we don't get the bonus points for the team challenge either.

ok here is my recipe.
NOPALES(cactus salad)
Ingredients
1 (16 ounce) jar nopales - drained, rinsed, OR
you can purchase 4-5 fresh nopales, clean them, dice them, boil them and drain them.
2 cups chopped tomatoes
1/2 cup diced onion
5 jalapeno peppers, seeded and minced (don't seed if you like the heat)
1/2 cup fresh cilantro leaves chopped
2 lemons
*salt or garlic salt to taste (optional,.. not something that is needed especially if purchasing canned nopales)
Directions
1. In a medium size mixing bowl, combine cactus, tomatoes, onions, jalapenos and cilantro. Squeeze the juice from both lemons over the mixture. Sprinkle with garlic salt/salt(if you'd like) and serve.

Amount Per Serving Calories: 30 | Total Fat: 0.3g | Cholesterol: 0mg
**cactus salad is just like any other salad, you add as much or as little of every ingredient as you like. You use most if not all fresh ingredients so it is pretty healthy. If you omit the lemon juice, you can even add this salad to scrambled eggs, or meat.**0 -

Well, the very reason I hate measuring my success by weighing in.....I gained. Back up to 205 as of this morning. i busted butt this week and now I'm feeling discouraged.

I completed the challenges for Friday and Saturday. Friday I was under my calorie count but not Saturday. I walked 5 extra miles this weekend,
Chopped Chicken Salad (4 servings)
3 T red wine vinegar
2 T extra virgin olive oil
2 t Dijon mustard
8 c spring mix w herbs
4 lg hard boiled eggs peeled and quartered
1 sm cucumber, sliced
1 1/2 c chopped rotisserie chicken
1/3 c chopped red onion
Whisk together vinegar, oil, mustard and 1/4 t each salt and black pepper in serving bowl
Add remaining ingredients and gently toss to combine
per serving

Take egg beaters dry oatmeal mix together dip whole grain bread sprinkle cinnamon and bake in oven for 15 to 20 minutes... Top with your choice of fruit! 210 per 2 slices. Zero fat!0 -
