Need to use up zucchini....help me out!

I need some zucchini recipes......other than sauteed, baked in a cheesy casserole and for bread.....sick of all these ways! I have ALOT so please help me!!

  • Grilled zucchini is great.
    Zucchini Bread is also good.
    Steamed zucchini.

    Slice it about 3/4 of an inch thick. Brush with olive oil, and grill one side. When you flip it, put about a small spoonful of pizza sauce on it, and a small sprinkle of low fat mozzarella cheese. Mini veggie pizzas :)

    Zucchini quiche is awesome! I also second the suggestion of grilled zucchini :)

    Chop it up and put it in a salad. Slice into rounds, freeze it and add it to chili's and stews over the winter. Use it as a base in a salsa. There are some good cookie recipes out there, too!
  • i fry it up with some mushrooms, green peppers, summer squash, tomatoes and shove it in a whole wheat pita pocket with 1 tablespoon french onion dip and 1/8 cup shredded mozzarella cheese..its like 200 calories and 6 grams of fat and very filling! YUM!!!

    slice, wrap in bacon and hold in place with tooth pics, salt, pepper and garlic powder, grill until bacon is cooked! yummy!

    slice, add butter salt and pepper. cook in microwave until zucchini cooked through!

    Edited to say: I normally halve the bacon, and add grated carrot and some sweet corn. You could sub the bacon for tuna as well.

    Use the McCormick seasoners that are meant for potatoes (they're like shake and bake). Just substitue zucchini cubes for potato cubes. I had some today. Yum. I also sliced zucchini up thinly and boiled it like noodles, using red sauce on it. It was okay -- since you have a lot, it may be worth trying.
  • If you grate it, then you can freeze it and use it later in breads and muffins. Its not diet friendly, but you can also make chocolate zucchini cake! =)

    You can add it to pasta sauce.... crushed tomatoes, diced zucchini, onion, garlic, oregeno, salt, pepper and what ever else you like in your red sauce.

    Slice and sprinkle it with seasonings of your choice, dehydrate the heck out of it, and use it as snack chips! Best part, they'll keep until winter! :-)

    Chicken, cubed zucchini, and corn with a little tomatoe sauce...its sooo yummy!
    Also split zucchini in half and steam with marinara sauce and a little bit of mozerella cheese.

    *She's got LOTS of recipes to include zucchini in (that are not necessarily veggie-focused), as she always ends up with tons of zucchini every year as well :happy: My fave recipe of hers that has zucchini is the Greek-style Meatballs... and the YUM tzatziki to go with it!!!

    Use a peeler to turn the fleshy part of the zucchini into zucchini "noodles", then boil the noodles for a minute (or a little less), drain and add your favorite pasta sauce. It's a delicious, healthy alternative to pasta!

    A sprinkling of raisins and heart-healthy walnuts make these low fat muffins the zucchini equivalent of Morning Glory Muffins. Enjoy with a low fat smoothie for a great start to your day.
    Cook Time: 20 minutes
    Total Time: 20 minutes
    Ingredients:

    1 cup all-purpose flour
    1 cup whole wheat flour
    1 tbsp baking powder
    1/4 tsp salt
    1/4 tsp nutmeg
    1/2 cup sugar
    1 cup shredded zucchini, packed
    1 tbsp lemon zest
    2 tbsp canola oil
    1 egg, lightly beaten
    3/4 cup fat-free milk
    1/3 cup raisins
    1/4 cup chopped walnuts

    Preparation:
    Preheat oven to 400 degrees. Line a 12-cup muffin pan with paper cases or spray pan with nonstick cooking spray.

    In a large bowl, stir together flour, baking powder, salt, nutmeg and sugar. In a medium bowl, combine zucchini, lemon zest, canola oil, egg and milk, stirring well.

    Make a well in the dry ingredients; add zucchini mixture, raisins and walnuts. Stir until just moist. Do not over mix. Spoon batter into muffin cups. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.

    Sautee thinly sliced zucchini in small amount of olive oil and garlic over low heat for twenty minutes (2 meduim zucchini and 1 tbsp evoo)

    Mix with half cup of feta cheese and basil. Enjoy!

    ever make stuffed green peppers? just use hollowed out zuchinni instead of the peppers, adding the pulp you scooped out to the filling

    Or

    shred as much as you want and toss in a heated, lightly oiled skillet. salt and pepper to taste, with fresh lemon juice.

    Squash and Tomato Gratin is really good. I cooked it last night, but didn't drizzle olive oil on it. I have a olive oil sprayer so I misted some oil on top. Family really liked it. Low in calories but lots of flavor!

    I use my slicer to make it into little thin strips and use it as noodles - I don't even cook it, just shred, put into bowl and pour over hot pasta sauce; it cooks it perfectly.
