    Mixed greens, Walnuts, chicken, cherry tomato and home made Basalmic Vinigarette, Dressing ingredients: EVOO, Good Basalmic, Dijon mustard, honey. YUM

    This may also not be what you were thinking of, but it's one of my fave's lately:

    APPLE SALAD
    1 Crisp Apple
    2 Tablespoon Raw Walnuts - chopped
    1/2 cup Grapes (halved)
    1-1/2 Stalks Celery
    2 Tablespoons Reduced Fat Mayonnaise
    1 Tablespoon Fresh Lemon Juice
    Salt and Pepper to taste
    Wisk together the mayonnaise and lemon juice, and salt & pepper, until combined.
    Cut celery and apple into small squares. Toss all ingredients with dressing and serve 1 of 2 waysL in 1 large leaf of lettuce so you can wrap it and eat it, or with 0.5-1 cups shredded lettuce.
    Makes 3 decent servings, each at approximately 120 calories
    So refreshing! ;)

    My two favourites (I don't actually measure everything, just to give an idea of the portion size):

    2-3 cups mixed greens
    10 cherry tomatoes, halved
    1 cup chopped cucumber
    1/2 cup chopped red pepper
    2 cups sliced mushrooms
    1 cup sliced onions
    1 potato, halved and sliced 1/4 inch thick
    3-4 ounce salmon fillet, skin on
    Salt and pepper
    Olive oil
    Dressing of choice (I like Kraft Fig and Balsamic)

    Place the salmon fillet and potato slices on a parchment lined baking sheet. Drizzle potatoes lightly with olive oil. Season fish and potatoes with salt and pepper. Bake at 425 degrees until cooked. Turn potatoes halfway through.

    Lightly saute mushrooms and onions in a frying pan with a tiny bit of oil. Saute until nice and brown.

    Put greens, tomatoes, cucumbers, and red peppers in a bowl. Add mushroom and onion mixture over top. Add potatoes. Remove salmon from skin in large chunks and add. Dress and eat.

    2-3 cups mixed greens or spinach
    10 cherry tomatoes, halved
    1 cup diced cucumber
    1/2 cup diced red peppers
    1 plum, cut into thin wedges
    2 eggs, medium to hard boiled
    Dressing of choice

    Combine and eat. Delish.

    I like this thread. I'm going to steal some of these ideas.

    Lately I've been using:
    1 cup Baby spinach
    1/2 Cucumber
    5 Cherry tomato halved
    1/2 cup Alfalfa sprouts
    1/8 cup Sunflower seeds
    1/2 Avocado

    Dressing: 1 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp Bragg's liquid aminos.

    And for dinner I'll throw some grilled chicken into it. Yum. Love salad! :-)

    I just had this salad for lunch:

    Romaine
    Cucumber
    Tomato
    Green Pepper
    Vidalia Onion
    Olives
    Black Beans
    Sunflower Seeds
    Grilled Chicken Breast
    Cubed Cabot 75% Reduced Fat Cheese
    Maple Grove Farm Fat Free Caesar dressing (2 tbsp. 10 cal)

    Yummy!!

    All of these look so good!

    A favorite of mine:

    sliced granny smith apples
    chopped romaine (coarse)
    craisins
    feta cheese

    dressing: (serving size for 1)
    2 tbsp dijon mustard
    1/2 tbsp olive oil
    3 tsp honey (warm up the bottle in a saucepan first so it whisks well, not too hot!)

    drizzle the dressing over the freshly combined salad and toss. YUM!

    If you want a leaf-less salad, try:
    Chickpeas
    Edamame
    Tomatoes
    Cucumbers
    Italian Dressing
    (add baby shrimp if you want)

    LOL! Tossed and in a bowl! Here is my favorite to serve tossed in a bowl:
    spring mix 3 cups
    semi soft goats chesse I use 1TBS
    slivered almonds 1/4cup
    roasted red peppers
    salad dressing like zesty italian calorie wise or better yet homemade salad dressing due the amount of sodium in store bought

    Iceberg lettuce, spinach or romaine, tomatoes, cucumbers, 1/8 blue cheese, 1/8 cup dried cranberries, fat free salad dressing (max of 2 TBSN), avocado slice, 1 oz max of turkey or chicken.

    That is my usual. I do shake it up with different types of cheese and other fruits. I can make a decent size yummy salad for under 250 calories and it fills me up.

    I will be trying some suggestions in this post.

    Romaine
    Corn
    Guacomole or sliced avocado
    2TB of Mango Peach Salsa
    2TB of Cilantro Salsa
    1TB of Chipotle Sour Cream
    1/2 cup of grilled/sauteed mushrooms and onions
    Meat - Ground beef, grilled chicken or grilled steak
    pickled jalapeno peppers

    Yum!!! The salsa is what I consider the salad dressing in this recipe. Enjoy!

    I just do romaine, spinach if I have any, grape tomatoes halved, green pepper, cucumber, carrots, usually a few dried cranberries and some almonds or cashews depending on how many calories I need. To beef it up I may add a hard boiled egg, chickpeas, or black beans. I add pepper, sometimes Mrs. Dash or perfect pinch Cajun spice. Then toss with whatever dressing I'm in the mood for. I really do like my salad tossed....it makes the dressing go a lot farther... Some people suggest dunking each bite but that seems like it would require way more dressing.
