Carrot Banana Muffins (Paleo friendly)

These are very tasty and easy to make!


2 cups almond flour
2 tsp baking soda
1 tsp sea salt
1 Tbs cinnamon
2 ripe bananas
3 eggs
1 tsp apple cider vinegar
1/4 cup coconut oil
1 cup carrots, shredded


Muffin paper liners

Instructions

Preheat oven to 350℉.
In a small bowl, combine almond flour, baking soda, salt and cinnamon.
In a food processor, bananas, eggs, vinegar and oil
Transfer mixture to a large bowl and blend until completely combined.
Fold in carrots and walnuts.

Spoon mixture into paper lined muffin tins.

Bake at 350° for 25 minutes.

    I'm going to try these out since we have a ton of carrots and I just made a similar recipe with blueberries and chocolate chips instead of carrots and it was amazing! In fact, I'm heading to trader joes to get more almond meal since I bet these freeze well and I need more quick, to-go breakfasts that I can grab early in the morning.

    I've seen a few variations on this recipe, but it all seems to turn out amazing. Here's the base that I used:
    3 cups almond flour
    3/4 tsp baking soda
    1/2 tsp salt
    2 large eggs
    1/4 cup honey
    3 Tbsp coconut oil (butter if not avail)
    1 tsp vanilla extract
    2/4 cup (approx 1 large) mashed ripe banana
    3/4 cup chopped walnuts (less to taste)
    3/4 cup blueberries (less to taste)

    I just had some yesterday that a friend made & OMG they are delicious! Does anyone know the nutritional information on these, calories/muffin?
