Need some great quick/simple recipes ...

I start work full time on Thursday ; so between taking care of our 3 month old son, pumping bm , making sure mommy takes good care of herself as I have lupus and working in the past has not worked out due to having flares and maintaining our home I know the last thing I am going to want to do it cook. I have two crockpots just don't use them often. Would love some recipe ideas!

  • This isn't done in the crock pot completely. I threw in a few pounds of chicken with garlic and onions and cooked it all so I have shredded chicken at the ready. I also make a large pot of brown rice and keep other staples to throw stuff together on nights I'm not in the mood to cook.

    I made this tonight and it was AWESOME! And my 5 yo picky-eater son asked for seconds! Can't get better than that!!
  • I love my crockpot! I usually get creative when I cook. If I find a recipe and go out and but all the stuff, usually I dont make it. So I take what I have on hand and create my own meals. I always have frozen chicken breast. My favorite recipe is:
    2-4 chicken breast (depending on how many you are cooking for, I have 7 people)
    A jar of salsa
    Green peppers and onions diced (I buy bags of the frozen already diced)
    Throw in the crockpot on low all day
    Shred the chicken and make tacos
    Eat it just as it is with rice

    Invest in a pressure cooker...makes quick really tasty meals...my fav. Chicken stew. In fact that is what I am making tomorrow.
