I'm making the tacos tomorrow
How's everyone else's recipe making going?0 -
I made the tacos last night, with a few changes. My changes:
I used 1 roma tomato
I used olive oil instead of canola oil
I added 1 zucchini to the onion
No cilantro or scallions
Wheat tortillas instead of corn tortillas
I thought this was very good. I used a little cheese and salsa verde and made a burrito. It made enough for at least 4 meals for me, so I don't have to cook for a couple of days
I think next time I won't char the tomato. I don't know if it makes a big difference in flavor, and it was a little more work.

I made the tacos tonight and they were very good!
I realized as soon as I did the tomatoes though, that I had done it wrong. I diced the tomatoes first and then put them in the dry skillet as opposed to putting the whole tomato in. This of course resulted in not very charred tomatoes, because they were wet. But they still tasted good!
I had also made Mashed Jalapeno Sweet Potatoes (http://allrecipes.com/recipe/mashed-jalapeno-cilantro-sweet-potatoes/detail.aspx) to put on the side, but I actually ended up putting those on the tacos too!
I really enjoyed this.
