While we're all eagerly awaiting week 3's results to be posted, here's a recipe from the "Hungry Girl" cookbook that I'm thinking about trying. To give you a point of reference, Reese's Peanut Butter Cups have 130 calories, 7g fat, and 14 carbs per cup (not per package).
chunky & nutty frozen pb cups
PER SERVING (1 pb cup): 78 calories, 2g fat,
123mg sodium, 11.5g carbs, 0.5g fiber, 2.5g
sugars, 2g protein
Ingredients
1 small (4-serving) package sugar-free fat-free
chocolate instant pudding mix
One 8-ounce container Cool Whip Free, thawed
2 ounces (about ½ cup) dry-roasted soy nuts
1 tablespoon mini semi-sweet chocolate chips
1 tablespoon reduced-fat peanut butter, room
temperature
Directions
Place pudding mix in a medium bowl. Add 3 ounces
(¼ cup plus 2 tablespoons) warm water. Stir until
smooth and thickened, about 2 minutes.
In a small bowl, combine 1 tablespoon Cool Whip with
peanut butter until mixed well. Stir into the pudding
mixture.
Stir in half of the soy nuts and all of the mini chocolate
chips. Fold in remaining Cool Whip. You don’t need to
mix it in completely—the marble effect is cool.
Line a 12-cup muffin pan with baking cups and spray
with nonstick spray. Evenly distribute pudding mixture
among the cups. Sprinkle the tops of the cups with
remaining soy nuts.
Freeze until solid, about 1 hour. Store in the freezer
until ready to serve.
MAKES 12 SERVINGS

making them. After that, they’ll need to be slightly

I'm back!
Unfortunately, due to much pigging out on our honeymoon, I won't be weighing in again until November 1st. I don't want to get discouraged and I need to get my body back to a healthier place. I need to detox for a bit. Too much delicious international food and wine fest at Epcot :-P

Back from a fun filled week at Disney Orlando with the family! With soo much great food there (and the portions are HUGE - enough for 2) I thought I would have put on 10 pounds. But all the walking must have burned a lot of it off since I am only up a tiny bit!

I made the PB cups I wrote about above, and they are fabulous! My boyfriend went back for seconds. I would recommend adding a few tablespoons more water to the pudding, and another tablespoon of peanut butter. Divided by 12, an extra tablespoon isn't going to change the nutritional information too much, and they could stand to be a little more peanut buttery.
I have completed 30 days of my 10 lb slimdown workout plan, and I've decided to start it again. I think I'm going to go back to 5 lb weights though; I'm having a hard time completing the full circuit with 10 lb-ers,
What's your favorite workout routine? Anyone found something they really enjoy that works for them?0 -
