    We love this soup!!!


    ENCHILADA SOUP

    2TBS. Vegetable Oil (or I use Extra Virgin Olive Oil)
    1/2C. Chopped Onion
    1/2C. Chopped Green Pepper
    1TBS. Minced Garlic
    1)14oz. Can of Vegetable Broth
    2)14oz. Cans Mild Red Enchilada Sauce
    1) 4.5oz Can Diced Green Chiles(I use 2 cans)
    1) 14oz. Can Diced Mexican Style Tomatoes
    15oz. Can Black Beans(Undrained)
    2C. Canned White Hominy(Drained)
    2TBS. Taco Seasoning Mix

    Sautee Onion, Green Pepper and Garlic for 2-3 Minutes or until onions are transparent
    Pour in all ingredients and bring to boil. Lower heat to low/medium heat and simmer for 20 minutes.
    Garnish with Tortilla Chips, Shredded Cheese and Sour Cream.

    French onion, with big pieces of onion, a huge crouton or piece of bread, and about a 1/2" of nicely toasted mozzarella and sprinkled with parmesan. Might as well follow it with a big slice of cheesecake, cause I'm off the wagon totally by that point.

    Not my favorite, but lentil soup is the easiest and cheapest thing to make.
    2 cups lentils, 2 quarts stock (I use concentrated), chopped carrots and onions, thyme, maybe a dash of cumin and just cook. I use the slow cooker. Sometimes I add some frozen chopped spinach for greenery.

    I like to make 2 variations on lentil soup

    1. Lentil soup with sausage. Use the same recipe (add some celery if you like) but brown sausage with the onions, carrots, and celery. Then add the lentils. They only need about 40 minutes to cook. You can also thrown in a can of diced tomatoes, and add more spices. I like thyme and crushed pepper flakes. IF I add greenery, I throw it in for the last 5-10 minutes. 3 minutes for spinach, 7 for chard, 12-15 for kale. Sometimes I use chicken apple sausage, or andouille, or chorizo. They all work equally well.

    2. Curried lentil soup with sweet potatoes (or squash). This time i use garlic, ginger, and onion and sautee with curry powder and maybe some cayenne pepper. Then add the lentils with the broth and top with a can of diced tomatoes. Cook the lentils for around 30 minutes, then add some sweet potatoes or winter squash. (Roasted is even better). Cook for another 15 minutes until soft. If you want to make it more "exotic" throw in a cup of coconut milk at the beginning of cooking, or add a little plain yogurt at serving time to mellow out the spices.

    I've made two soups in the last two weeks that are delicious!

    -Ina Garten's seafood corn chowder

    and

    Paula Deen's slow cooked pinto beans (but I used black eyed peas since they have higher iron levels)


    YUMMY! My boyfriend said the seafood corn chowder was the all-time best thing I've ever made. I love to cook, hence my screen name, and I'm always reading new recipes to try.
