I am so w/you, I LOVE cheese so I agree w/some others....Laughing cow low fat cheese wedges (35 cal.) are really delicious!!! I've tried Sundried Tomato and Basil Moz. as well as Garlic and Herb. If you pair up w/6 triscuts (120 cal) it's actually a good snack or side to a lunch w/salad (or the tomatoe "salad" recipe I have below).
I love feta too! If you also like sweet tomatoes/cherry tomatoes this is great...
Cut them in half (that's how I like them)
Add a bit of low fat feta
Mix up olive oil, balsamic vinegar and italian seasoning to taste.
Combine all the ingredients and use as a side dish or main dish.
I've also added scallions and/or baby spinach.
For mac n cheese, use lowfat/low sodium chicken stock w/skim milk and flour to thicken your sauce and use less of a very strong cheese(s) as that will help w/the taste.0 -
