    I've discovered how great rice cakes are lately. I love them with peanut butter on top. The rice cakes I have are only 8g carbs, which is not bad considering what it's made of.

    Like everyone else has said too, nuts, carrots, pepper strips, and other veggies.

    I love rice cakes but I don't think I new they were that low in carbs. Will check them out again, thanks

    Just wanted to let you know that I did try the hummus idea, I went with roasted red pepper...and it was wonderful! good to put on anything crunchy. Thanks guys, YOU ROCK!

    Good snack ideas, just marking the thread so I can find it again. Think I'll try the chickpeas one first. I have a couple of tins in the cupboard.

    Look up the topic of microwave healthy popcorn - my new fav!!!!

    Also, here is my recipe for granola. It is crunchy and delicious - plus you can use it as a cereal or my family adds it to greek yogurt or frozen yogurt.


    Granola Recipe

    2 c. rolled oats
    1 t. cinnamon
    ½ t. salt
    2/3 c. walnuts (You can use pecans also)
    3 T. oil (I use olive oil, you can use vegetable or canola oil)
    ¼ c. honey or agave
    ¼ c. firmly packed brown sugar
    1 t. vanilla extract
    OPTIONAL – I add sliced almonds, sesame seeds and raw sunflower seeds. No measuring, just throw them in.

    Preheat oven to 325 degrees. In a large bowl, toss oats with cinnamon, salt, nuts and seeds. In a separate bowl, mix together the oil, honey, brown sugar and vanilla until blended. Pour the wet mixture in with the dry and use your CLEAN hands to combine the two until everything is well coated and your hands are gooey. Lick them if you must (you will want to), but WASH your hands right after.

    Cover a baking sheet with parchment paper and pour the mixture over top. Spread it out evenly, but it should be clumpy in spots. Bake for 10 minutes and then use a spatula to gently flip the granola over. Return to the oven for another 15 minutes. Remove from oven and cool completely in the pan. ** Very important because it will smell awesome and you are going to want to try it right away but DON’T, walk away and let cool completely so it hardens. Use your hands to break up the granola into clumps. Place in a tightly lidded container or Ziploc bag.

    I like Pop Chips, the sour cream and onion are very good! Trader Joe's also has popped potato chips that are good!

    Veggies!!! Sugar snap peas, red, yellow, orange pepper strips, celery..all soo yummy. popcorn has a crunch, i eat skinny pop or the 100 calorie snack bags. Rice cakes have crunch, usually get 15 or so for 120 calories. Popchips, the bbq ones especially.
    Popchips are really good. Especially sea salt and vinegar

    I just discovered pop chips. The plain ones are too plain but I liked the barbq ones. My trader Joe's is limited on flavors.

    I eat wheat thins with hummus for my snacks usually. Sometimes I have baby carrots with hummus. So tasty!

    APPLES OR I TAKE BROCCOLI AND DRIZZLE OLIVE OIL AND A LITTLE SEA SALT ON IT AND PLACE IN OVEN AT 400 DEGREES UNTIL THEY ARE CRISPY.. THEN I LET THEM COOL A LITTLE AND THEY ARE YUMMY DIPPED IN GARLIC HUMMUS!!!!!!!

    I know this is a little sweet and carb heavy but I like Honey Wheat Pretzel Twists I take 5 of them out of a bag and depending on if I am craving sweet or savory, I measure out 1 Tablespoon of Nutella and dip them, or 1 tablespoon of natural Peanut Butter and dip them.

    Roasted Chick peas
    1 can drained and rinsed well chickpeas
    1 baking sheet with wire rack layed on top
    a few tblsp EVOO
    salt, pepper, garlic, cayenne pepper ( whatever spices you like)

    toss chick peas in evoo and spices spread on wire rack and bake at 350 untill dry and crisp

    Roast any veggies you like ( i loove cauliflower)
    toss veggies in EVOO and salt pepper garlic,
    roast at 350 for about 15-30 mins untill browned and then sprinkle with parmesean cheese
    (also works well if you slice turnip/potatoes or other root veggies REALLy thinly and roast to make a chip

    Will definately be doing this... I have done it before with cauliflower... never thought of chickpeas.

    its nuts, but im addicted to roasted broccoli & smashed garlic. Its even good the next day cold.
  • You can use pepperoni or turkey pepperoni. Slice a low fat mozz stick and slice it up. Place the cheese slices on the pepperoni and zap in the microwave until the pepperoni is crispy and the cheese is melted. I usually add red pepper for some spice, and if I am having a major craving, I will dip them in some marinara sauce. Hope this helps!

    I have been OBSESSED with Baked kale Chips!!!! I buy the bag of fresh Kale from Trader joes that's already torn (but still remove some of the thicker veins) use about 1/3 of the bag, toss with olive oil and a little sea salt and bake @350 degrees for about 10 minutes. Check to see if it's all crispy, but not burnt....I love them! Definitely helps that need for the crunchy stuff!

    This doesn't taste anything like seaweed crips does it? I tried that at Trader Joes and it took four hours to get the tsast of dead fish out of my mouth! UCK!
