Crockpot Salsa Chicken

I searched for this but didn't see it, so I'd like to share!
4 boneless, skinless, frozen chicken breasts (about 34oz)
1 jar of your favorite salsa (16oz jar or close to)
1 bag of frozen sweet corn ( I use about 3/4s, a whole 12oz bag is a bit much for me)
1 can of beans (I prefer pinto or great northern)
8oz fat free cream cheese (or low fat but adjust calories accordingly, fat free is 210cals)
Mix together the first four ingredients in a crockpot set to low. Stir occasionally and let sit for 6 hours. Half an hour before serving, use a fork or mix it up really well to shred the chicken. Add in the cream cheese and stir as needed. Serve with baked tortilla chips as a dip or in a taco shell/tortilla.
Yields 6 servings, 267 calories. Or 4 servings at 400 calories.
For the low carbers, at 6 servings this yields 14.3 net carbs per serving.

I make this all the time..I don't use the cream cheese...We just add a little cheese(like a taco) when we serve it...YUMMY!!!0

The cream cheese definitely adds another level of flavor. I was sceptical at first since it has no seasonings, but It's delicious without! I make this for parties and It's always a big hit.0

I make the same thing (using black beans and a 1/2 packed of taco seasoning) , But I drain it and use it for tacos or burritos.0
